Warm chocolate banana bread oats baked until gooey and soft. Now, doesn’t that sound like an indulgent breakfast. If you need an excuse to jump out of bed, then this is it.
Thick cake-batter style oats baked in an individual ramekin or dish until nice and crispy on top with a soft and welcoming inside. Studded with cacao nibs for extra chocolate indulgence, this is one healthful and delicious way to start the day (or to enjoy as a mid-afternoon pick me up or after dinner snack).
What I love about baked oats is, well, pretty much everything. This Chocolate Banana Bread Baked Oatmeal version is a cross between a steaming bowl of oats and a rich chocolate brownie dessert. While it skips on all the added sugars of a traditional brownie, this banana bread version is loosely based on my favourite recipe for Banana Bread, my Double Chocolate Banana Bread Brownies and my love for chocolate. Many people may think chocolate isn’t ‘good’ enough for breakfast but this is one option that proves you can eat cake for breakfast and feel fuelled and energized all morning. The oats will add a boost of fibre and wholegrain carbohydrates to your day while the cacao is rich in antioxidants and one serving provides you with an easy portion of fruit.
It comes together in one bowl, bakes for 15-20 minutes and there you have a single-serving chocolate breakfast that will bring a smile to your face. Simply mash the banana, stir the ingredients together and put the kettle on while the Chocolate Banana Bread Baked Oatmeal, well, bakes. You can even bake this the night before and enjoy it cold in the morning with a splash of milk and any other toppings you desire. I love to eat mine fresh out of the oven with extra banana slices, lots of nut butter, some cacao nibs and coconut yoghurt to have a welcoming contrast of textures, flavours and heats.
One of the best bits about this recipe is the gooey banana slices that caramelise while in the oven, these are like gold dust. Perhaps you’ll even make a bigger batch to share with friends over a lazy weekend or brunch or to keep you going all week.

Chocolate Banana Bread Baked Oatmeal
Warm and gooey baked oats studded with cacao nibs and rich cacao powder - all the deliciousness of porridge baked in the oven.
- 50g oats
- 1 banana
- 70ml plant milk (I like oat or almond)
- 1 tbsp chia seeds
- 1 tbsp raw cacao powder
- 1 tbsp cacao nibs
- ½ tsp baking powder
- ½ tsp vanilla
- pinch of salt
- 1 tbsp maple syrup, optional
- Preheat the oven to 170 Fan/190*C and grease a small ramekin or single-serving enamel dish.
- Mash half the banana until smooth and add the oats, milk, chia seeds, raw cacao powder, baking powder, cacao nibs, vanilla, salt and syrup, if using, and stir until creamy.
- Pour into the lined ramekin and top with the other half of banana, sliced.
- Bake for 15-20 minutes until firm to the touch and enjoy warm or cold the next day with a splash of milk, yoghurt, extra fruit and nut butter.
