Thick, chewy and fudgy chocolate brownies packed with hidden avocado, sweetened with coconut sugar and maple syrup with a rich chocolatey flavour that leaves you wanting more. These brownies are, of course, vegan and dairy-free while also being nut-free with a gluten-free option.

I have had avocado brownies on my mind for a while now after the Avocado Chocolate Mousse Pots that I have made a few times now and when my brother’s birthday came around this year, I knew it was just the occasion. I had recently been chatting to a friend about trying to strike the balance between delicious and indulgent baking (that happens to be vegan) with healthy treats that we like. My aim is to encourage everyone to see how amazing vegan food is and how indulgent recipes can taste without using too many excess ingredients and I think these Fudgy Chocolate Avocado Brownies will please both parties – those interested in health and those we are just after a good chocolate brownie.

And these are good if I say so myself!

They had great feedback from friends and family, and I hope they will become a real crowd pleaser for you. They are thick and oh-so-fudgy thanks to quite a wet brownie batter mix and I almost thought they were too fudgy (is that a thing?!) but luckily they do firm up once cooled and you can leave them in the fridge and they are still fudgy enough. Enjoy them for dessert with ice cream, an afternoon snack with a cup of tea or layered with thick peanut butter or make them into a delicious ice cream sundae this summer.

They are super easy and quick to make, simply add all the ingredients into a food processor until creamy, pop in a few chocolate chips and bake. I’ve used pre-smashed avocado from Holy Moly who sponsored this recipe as I love their range but you can similarly use fresh avocado flesh. Add in some milk, syrup, sugar, flour (feel free to try with gluten-free flours and let me know how you get on), a little baking powder for a rise, raw cacao powder for a rich chocolate flavour, some espresso powder for a depth of flavour (it won’t taste like coffee – it only adds more intensity but you can leave these out or sub for decaf) and blend. I like to add chocolate chunks rather than chips for large pieces of melted chocolate and save a few for sprinkling on top.

They are rich and indulgent without being overly sweet or sickly and are great to bring to parties as an impressive dessert.

Fudgy Chocolate Avocado Brownies

Thick, chewy and fudgy chocolate brownies packed with hidden avocado, sweetened with coconut sugar and with rich espresso powder, these delights are vegan, nut-free with gluten-free options.

Ingredients

  • 120g avocado
  • 240ml plant-based milk
  • 70g maple syrup
  • 50g coconut sugar
  • 150g plain flour
  • 1 tsp baking powder
  • 55g cacao powder
  • 1 tsp espresso powder
  • Pinch of salt
  • 60g chocolate chips/chunks

Directions


1. Preheat the oven to 160Fan/180*C and line a baking dish (24cm x 16cm) with parchment paper.
2. Place the avocado, milk, syrup and sugar in a blender and process until smooth and creamy.
3. Mix together the flour, baking powder, cacao powder, espresso powder and salt and in a large bowl.
4. Pour the wet avocado mixture into the dry and stir until combined. Fold in the chocolate chips, saving a few for the top. Pour the batter into the prepared dish, smooth over the top and sprinkle over the remaining chocolate chips.
5. Bake for 20-25minutes until firm to the touch in the centre.
6. Allow to cool for 30 minutes before slicing and serving, they will be fudgy and delicate but firm up as they cool.

    Hi Amy, thanks for this, can I use fresh espresso shot instead of powder and if so what do I adjust?

    • Hey! Either leave out the coffee altogether as it is not essential but adds a richer flavour, or reduce the amount of milk you add to the batter depending on how many ml your espresso shot is! Enjoy and let me know how you get on
