Chocolate Chunk Pancakes (GF)

Light and fluffy mini pancakes studded with melting chocolate chips. These pancakes are vegan, gluten-free, healthy and refined sugar-free and come together in a blender in 5 minutes.

Pancake day is coming up later this month so I thought I’d get ahead of the game and start playing around with a few new pancake recipes this year. So, this is the first one!  These Chocolate Chunk Pancakes are the simplest recipe, but they work every time.

While there are so many options when it comes to pancake flavours, I went for a classic and indulgent chocolate chunk theme for these (first made with the rich cacao nib chocolate from Divine). What is so delicious is how the chocolate chunks melt into the pancake batter as they cook so each bite is oozing with melting rich chocolate. These are definitely not for the faint-hearted as chocolate is the main attraction!

These Chocolate Chunk Pancakes are naturally gluten-free as I use oats as a “flour” and just add the other ingredients to a blender to form the smooth batter. I use my favourite plant-based milk and lemon juice combination here which works to bind the batter and keep it fluffy and light. A little bit of baking powder also helps them to rise. Although they are quite small, these pancakes are best enjoyed stacked high with more melted chocolate on top.

I hope you will love these light, fluffy and simple pancakes that are naturally fibre-filled, healthy, gluten-free and vegan. They are easy to make, and you can serve them to friends and family for an impressive brunch or a pancake day dessert. They also keep well, so you can pop them in the fridge for a couple of days and heat back through to enjoy warm.

Chocolate Chunk Pancakes

  • Servings: 2 (makes 14 small pancakes)

Light and fluffy mini pancakes studded with melting chocolate chips. These pancakes are vegan, gluten-free, healthy and refined sugar-free and come together in a blender in 5 minutes.

Ingredients

  • 100g oats
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • Pinch of salt
  • 1 banana
  • 240ml plant-based milk
  • 1 tsp lemon juice
  • 60g dark chocolate, chopped into chunks
  • To serve: melted chocolate, yoghurt, syrup, fruit, extra chocolate

Directions


1. Place all of the pancake ingredients except the chocolate into a food processor or blender and whiz until thick and creamy. Pour into a bowl and leave to rest for 10 minutes. Stir through the chocolate chunks.
2. Heat a large non-stick frying pan with a little oil and drop 1 large tbsp of batter into the hot pan per pancake. Cook over a high heat until bubbles form, about 2 minutes, then flip and cook on the other side for 2 minutes or until golden. Repeat until all the batter has been used.
3. Serve warm with melted chocolate, yoghurt, syrup, some fruit and squares of chocolate.

    What is the weight of the banana here? I can’t eat banana so I was thinking of using apple purée instead. Thanks

    • Hi Anna, I am so glad you want to make them, an avereage banana is about 100g for a small one to 150g for a large one, so I’d aim for about 120g of apple puree for example!

        They came out a bit flat and mushy… Even though I did cook them on quite a low heat until they were nice and brown. I had the same problem with the tiramisu pancakes.

      • Hi Anna, you should be cooking pancakes on a medium-high heat, not a low heat otherwise they won’t crisp and cook like pancakes should. It also may be that you swapped the ingredients around – as mentioned before I have only tested the ingredients as written in the method. Next time, use a non-stick frying pan on a higher heat and it sounds like the apple was too much liquid, so use less or add more flour. Thanks for letting me know and hope you still enjoyed them 🙂
