Cinnamon buns without the yeast? No time needed for kneading or proving, these Cinnamon Raisin No Yeast Swirl Buns are all of my cinnamon bun prayers answered. They are still light and fluffy with a slightly crisp top layer thanks to a sugar-butter glaze before they bake. These mini buns are smaller versions of the huge buns you’ll see in the shops but at a fraction of the time and effort required, they are such a winning bake.
The time to leave the dough to prove and rise always makes me so anxious. What if the yeast wasn’t the optimum temperature? What if the airing cupboard (my “proving drawer”) is too hot or too cold? This easy recipe gets rid of all the doubt as I use self-raising flour instead.
Another reason I love this recipe is that it is a smaller batch although you could easily double the recipe to make either 10 much larger buns or to make 20 small ones, depending on how long you role the rectangle of dough. For this version, I use a piece of dough about 30x20cm.
My favourite part of these Cinnamon Raisin No Yeast Swirl Buns is the cinnamon sugar and raisin filling which turns wonderfully sweet and sticky in the oven. Once the buns are cool enough, spread the frosting over generously. I am a big fan of cream cheese frostings; I love the slightly tart edge they add to a usually-very-sweet glaze. Sprinkle over a little bit of sugar and cinnamon and serve these to friends and family with cups of tea, for an impressive brunch or enjoy as a dessert with custard.
These Cinnamon Raisin No Yeast Swirl Buns are easy to make in 30 minutes without any kneading or proving.
