There are definite perks of working from home, one of them being you can have a more leisurely breakfast without having to rush out the door. And with more of us than ever working from home right now, it seems only right that I share a second baked skillet pancake recipe with you after my first Date and Cinnamon one went down a treat.
These baked skillet pancakes are a revelation to me – they are fluffy, moist, tender yet crispy and taste like cake for breakfast. Even more so that this one is carrot cake flavoured. Yes, you can even add in some vegetables and still eat cake first thing. With some warming spices, raisins and even an orange cream cheese glaze, this Carrot Cake Baked Skillet Pancake makes the most of having more time in the mornings. That said, this pancake is special enough to save for the weekends. But it is so easy why not treat yourself all week long?
It comes together with basic store-cupboard staple ingredients: milk, lemon juice, oats, flour and even some protein powder for an added protein boost. I like to add vanilla protein to this baked pancake for a lovely cake-y flavour and the protein powder does add a great texture, too. If you’re not using protein powder, you could try some ground almonds instead.
Bake this Carrot Cake Baked Skillet Pancake in the oven until firm and springy and top with whatever you like. If you don’t have a mini skillet, you can also use small ramekins or other oven-proof dishes, too. They all work well and allow the batter to rise.
