Carrot Cake Baked Skillet Pancake (Vegan and GF)

A large, warm and wholesome pancake baked in the oven until fluffy studded with juicy raisins and carrot cake flavours for a take on the classic cake. Top this single-serve pancake with anything you like for a delicious vegan and gluten-free breakfast.

There are definite perks of working from home, one of them being you can have a more leisurely breakfast without having to rush out the door. And with more of us than ever working from home right now, it seems only right that I share a second baked skillet pancake recipe with you after my first Date and Cinnamon one went down a treat.

These baked skillet pancakes are a revelation to me – they are fluffy, moist, tender yet crispy and taste like cake for breakfast. Even more so that this one is carrot cake flavoured. Yes, you can even add in some vegetables and still eat cake first thing. With some warming spices, raisins and even an orange cream cheese glaze, this Carrot Cake Baked Skillet Pancake makes the most of having more time in the mornings. That said, this pancake is special enough to save for the weekends. But it is so easy why not treat yourself all week long?

It comes together with basic store-cupboard staple ingredients: milk, lemon juice, oats, flour and even some protein powder for an added protein boost. I like to add vanilla protein to this baked pancake for a lovely cake-y flavour and the protein powder does add a great texture, too. If you’re not using protein powder, you could try some ground almonds instead.

Bake this Carrot Cake Baked Skillet Pancake in the oven until firm and springy and top with whatever you like. If you don’t have a mini skillet, you can also use small ramekins or other oven-proof dishes, too. They all work well and allow the batter to rise.

It is naturally gluten-free as I use oats and GF flour and is dairy-free and vegan. It is cake-y, moist, fluffy and decadent while being healthy and packed with vegetables, too.

A large, warm and wholesome pancake baked in the oven until fluffy studded with juicy raisins and carrot cake flavours for a take on the classic cake. Top this single-serve pancake with anything you like for a delicious vegan and gluten-free breakfast.

Ingredients

  • 180ml almond milk
  • 1 tsp lemon juice
  • 35g oat flour (oats whizzed in a blender to a fine flour)
  • 35g GF flour blend (or plain, spelt or wholemeal flour)
  • 20g vanilla protein powder
  • ½ tsp baking powder
  • ½ tsp bicarbonate of soda
  • ½ tsp cinnamon
  • ¼ tsp ground ginger
  • Pinch each of ground cloves, nutmeg
  • 60g grated and peeled carrot
  • 30g raisins
  • To serve: cream cheese glaze, fruit, cacao nibs

Directions


Method:
1. Preheat the oven to 160Fan/180*C. Mix the milk and lemon juice together and leave for 5 minutes to curdle.
2. Stir together the oat flour, GF flour, protein powder, baking powder, bicarbonate of soda and all the spices.
3. Pour the wet mix into the dry and whisk until combined – a few lumps are OK. Stir in the grated carrots and the raisins.
4. Pour into a lightly greased mini skillet or ramekin dish (about 14 cm diameter) and bake for 25 minutes until golden and risen – an inserted toothpick comes out clean.
5. Allow to cool slightly as it will continue to cook, before serving with your favourite toppings. For the cream cheese glaze, stir together 1 tbsp vegan cream cheese with a splash of water, and some grated orange zest until smooth.
