One-Pan Fruit Protein Pancake

A light and fluffy single-serve giant pancake that is packed with fruit and protein. Naturally vegan, gluten-free and nut-free it comes together in 10 minutes and works well with whatever toppings you choose.

I love pancakes – especially at the weekends – but sometimes, I want to throw it all in a pan rather than waiting around and flipping the individual mini cakes. That’s when I thought about creating a new giant pancake recipe – after my original Giant Protein Pancake. It is light and fluffy and fuss-free. I’ve tried this One-Pan Fruit Protein Pancake with a few different flours – chickpea/gram flour, GF and plain flour all work really well and while they may differ slightly, they all result in a light and fluffy pancake. I use equal measures of flour and protein powder as I love the flavour and texture – I have stuck to vanilla to add a lovely cake-y flavour, but you could try chocolate or berry for example.

The rest of the batter for this One-Pan Fruit Protein Pancake is the baking powder for rise and some milk. Whisk it all together and add to a pan with your favourite fruits. I chose sliced fig but you can try anything – thin slices work best to allow the pancake to cook evenly.

The key to this One-Pan Fruit Protein Pancake is patience. Do not be tempted to try to flip this pancake over too soon, it will take longer than ordinary smaller pancakes. Depending on the size of pan and fruit, it can take between 5 and 10 minutes until risen and firm to touch. I also cook it with a lid on for maximum fluffiness. I find cooking it this way means the top is cooked through so no need to flip over. For this shoot, I chose coconut yoghurt, fruit, melted chocolate and some syrup but use anything you like.

These pancakes make a simple, delicious and wholesome breakfast or brunch that comes together quickly and effortlessly. Make them with your preferred flour, protein powder and fruit for endless flavour combinations. They are light and fluffy, filled with fruit pieces, naturally vegan and gluten-free and low sugar.

A light and fluffy single-serve giant pancake that is packed with fruit and protein. Naturally vegan, gluten-free and nut-free it comes together in 10 minutes and works well with whatever toppings you choose.

Ingredients

  • 30g GF flour or other flour
  • 30g vanilla protein powder (or another flavour)
  • ½ tsp baking powder
  • 150-180ml plant-based milk
  • Fruit e.g. sliced figs, chopped strawberries, plums
  • Coconut oil, for frying
  • To serve: coconut yoghurt, warm berries, melted chocolate, syrup

Directions


1. Add the flour, protein powder and baking powder to a bowl and whisk in the 150ml milk. The batter will be thick and sticky. If it is thick, add more milk.
2. Prepare the fruit, you need enough to cover the base of a small saucepan.
3. Heat ½ tsp coconut oil in a small non-stick frying pan and add the fruit slices over the base of the pan. Fry for a couple of minutes before pouring over the pancake batter and spreading out to cover the entire base of the pan.
4. Reduce the heat to a medium-high level, place a lid over the pan and cook for 5-10 minutes, until risen and firm to touch.
5. Carefully use a spatula to flip onto a plate (trick: loosen the edges with a spatula, place a large plate over the saucepan and invert the pan, with one hand holding the plate to flip the pancake onto the plate). Serve with your favourite toppings.
