A light and fluffy single-serve giant pancake that is packed with fruit and protein. Naturally vegan, gluten-free and nut-free it comes together in 10 minutes and works well with whatever toppings you choose.
I love pancakes – especially at the weekends – but sometimes, I want to throw it all in a pan rather than waiting around and flipping the individual mini cakes. That’s when I thought about creating a new giant pancake recipe – after my original Giant Protein Pancake. It is light and fluffy and fuss-free. I’ve tried this One-Pan Fruit Protein Pancake with a few different flours – chickpea/gram flour, GF and plain flour all work really well and while they may differ slightly, they all result in a light and fluffy pancake. I use equal measures of flour and protein powder as I love the flavour and texture – I have stuck to vanilla to add a lovely cake-y flavour, but you could try chocolate or berry for example.
The rest of the batter for this One-Pan Fruit Protein Pancake is the baking powder for rise and some milk. Whisk it all together and add to a pan with your favourite fruits. I chose sliced fig but you can try anything – thin slices work best to allow the pancake to cook evenly.
The key to this One-Pan Fruit Protein Pancake is patience. Do not be tempted to try to flip this pancake over too soon, it will take longer than ordinary smaller pancakes. Depending on the size of pan and fruit, it can take between 5 and 10 minutes until risen and firm to touch. I also cook it with a lid on for maximum fluffiness. I find cooking it this way means the top is cooked through so no need to flip over. For this shoot, I chose coconut yoghurt, fruit, melted chocolate and some syrup but use anything you like.
I hope you will love making this One-Pan Fruit Protein Pancake, it is great when you want to just make a single-serving of pancakes, but you can also increase the recipe as needed to make multiple giant pancakes. These pancakes make a simple, delicious and wholesome breakfast or brunch that comes together quickly and effortlessly. Make them with your preferred flour, protein powder and fruit for endless flavour combinations. They are light and fluffy, filled with fruit pieces, naturally vegan and gluten-free and low sugar.
