Mini Oat Pancakes (Vegan GF)

Light and fluffy miniature-sized pancakes that come together in 5 minutes and make a deliciously simple, healthy and fun breakfast or snack. These pancakes are naturally gluten-free, vegan and perfect any day of the week.

Across my social media at the moment, I keep seeing a lot of “pancake cereal” posts which is basically mini pancakes in a bowl and served like cereal with your favourite toppings and/or milk. While I love keeping up with the trends, like the amazing Dalgona Lattes, I also only jump on board if it something that I genuinely would enjoy. I think pancake cereal is a fun idea, but it’s not quite how I would describe and enjoy these miniature pancakes, so I’ve called them Mini Oat Pancakes instead. That way, long after the pancake cereal trend fades, we can all still enjoy pancakes in a smaller format with all the best toppings.

There are no secrets to these Mini Oat Pancakes – the recipe is so easy and so basic but sometimes that is the best way. Although, I must admit the first time I made these I added way too much bicarbonate of soda after checking out a few similar recipes and also, I used flaxseed. I soon learnt that I needed to reduce the bicarb by at least half (now you can’t taste it but they’re still so fluffy!!) and they are great without the flaxseed. I love using ground flaxseed and chia seeds as “eggs” in recipes, but I realise that not everyone has access to them, and I wanted to make these Mini Oat Pancakes as accessible as possible.

So, now all you’ll need to make these cute pancakes are oats blitzed into oat flour (or use plain flour), some bicarbonate of soda, plant-based milk, syrup and lemon juice. Whisk it all together and allow to rest and thicken for 5 minutes. Heat up a frying pan and either pour the batter into a piping bag or plastic bag and cut a hole in the end or use a teaspoon to create mini pancakes. Allow them to cook – they don’t take long – flip over and cook the second side. Then the rest is up to you!

Serve these Mini Oat Pancakes any which way you like, I went with berries, blueberry yoghurt, some peanut butter and more syrup, but you can use chocolate spread, ice cream, banana… anything you like.

These Mini Oat Pancakes are the perfect quick and easy but fun and delicious breakfast, brunch, lunch or snack for friends and family. Halve the recipe for one or increase the recipe to make a big batch. They keep well so you can pop them in the fridge or freezer and warm back through. They are naturally gluten-free (check your oats if you coeliac) and vegan while being healthy, fluffy, light and creative.

Light and fluffy miniature-sized pancakes that come together in 5 minutes and make a deliciously simple, healthy and fun breakfast or snack. These pancakes are naturally gluten-free, vegan and perfect any day of the week.

Ingredients

  • 100g oat or plain flour (grind oats into a flour in a blender)
  • 1 tsp bicarbonate of soda
  • 120ml plant-based milk
  • 2 tbsp syrup
  • 2 tsp lemon juice
  • Coconut oil, for frying
  • To serve: fresh or frozen fruit, yoghurt, syrup, nut butter

Directions


1. To a bowl add the flour, bicarbonate of soda and stir. Whisk in the milk, syrup and lemon juice until thick and smooth. Leave to rest for 5 minutes.
2. Pour the batter into a piping bag or resealable bag and cut the end off (or skip this step to use a spoon). Heat some coconut oil in a large frying pan and pipe some of the pancake batter to form mini pancakes, about the size of a £2 coin. Or, use a teaspoon to drop the batter into the pan. Cook the pancakes for 1-2 minutes until cooked underneath, flip over and cook on the second side. Repeat to cook all the pancakes.
3. Serve warm or cold with fruit, yoghurt, syrup and nut butter.

    Aww 😍 yes I have been seeing mini pancake 🥞 cereal- never knew where to buy. But then I thought I wouldn’t personally eat it and not just buying for sake of insta craze.
    So seeing your oat mini pancakes looks so much better then cereal for sure and my favourite toppings. Definitely berries, syrup in the mornings, then ice cream in evening.
