Chocolate Covered Mummy Sugar Cookies (Vegan)

Simple and delicious vegan sugar cookies decorated with dark chocolate and icing sugar mummy faces. Add on some edible sugar googly eyes for a real Halloween treat. They are naturally vegan and great to make with children, too.

I’ve got another super simple and delicious Halloween treat today and it comes in the form of cookies – what’s better?! Plus, these simple sugar cookies are great to make any time of the year and decorate as you wish – I’m thinking they will be so cute for Christmastime cut out in festive shapes or even for Valentine’s Day if you use a heart-shaped cutter. So, let your imagination run wild.

For these Chocolate Covered Mummy Sugar Cookies, I went for a simple round cutter for the face-shape and then smother them in rich chocolate. Sip in the baked cookies, smooth off the excess with a palate or regular knife and allow to cool. Then, simply pipe or drizzle over your “mummy” faces and add on the googly eyes. Believe me, once you add on the eyes, these cookies really come to life. But, you can use whatever you have to hand! I also made some pure chocolate ones sprinkled with lots of sugary coloured sprinkles and glitter which were really fun.

The base of this recipe is a really simple cut-out sugar cookie one that is naturally vegan although I have not tried this with any other flour.

  • Vegan butter or margarine: either will work and add that soft texture and “buttery” taste. I have not tried this with coconut oil, I worry the texture would not be as soft, but let me know!
  • Caster or light brown sugar: I used half and half here, or you could use coconut sugar. But I wanted to highlight how simple these cookies are, so opted for “regular” sugar.
  • Vanilla essence: purely for the classic sugar cookie sweet flavour. 
  • Plant-based milk: just a splash to make this dough “wet” enough. Use any plant-based milk that you have!
  • Plain flour: the simple recipes often are the best and this one calls for regular flour. I can image spelt or wholemeal flour would also work or even buckwheat, but I have not tried these.
  • Baking powder, bicarbonate of soda and salt: all for a gentle rise and flavour.

That’s it! This is a simple cookie recipe: cream together the butter and sugar. Add in the other liquid ingredients and then stir in the flours to make a sticky dough. Roll out the dough and cut out in any shape you like! The more inventive, the better!

  • Chocolate: dip into lots of chocolate and spread off any access and allow to cool.
  • Icing sugar: make a quick glaze and then drizzle over the chocolate!

Ingredients

    Cookies:
  • 100g vegan butter or margarine
  • 100g caster or light brown sugar (or half and half)
  • 1 tsp vanilla essence
  • 2 tbsp plant-based milk
  • 250g plain flour
  • ½ tsp baking powder
  • ½ tsp bicarbonate of soda
  • A pinch of salt
  • To decorate:
  • 70g dark chocolate
  • 70g icing sugar
  • 2-3 tsp water
  • Sugar edible eyes or sprinkles

Directions

  1. Preheat the oven to 160Fan/180*C and line a cookie sheet with baking paper.
  2. Cream together the butter/margarine and sugar until fluffy and creamy. Stir in the vanilla essence and plant-based milk.
  3. Add in the flour, bicarbonate of soda and the salt and stir to form a ball of dough. Bring it together with your hands.
  4. Transfer the dough to a surface covered in parchment paper and roll out to about 1cm thickness using a second piece of parchment on top (or you could use flour). Use a cookie cutter to cut out shapes and transfer to the cookie sheet (use a pallet knife to loosen them).
  5. Bake for 10 minutes until golden and allow to cool fully on the tray on a wire rack.
  6. Melt the chocolate and dip each cookie in to coat the cookies evenly. Allow to cool again before decorating with icing sugar and the sugar edible eyes. Store in an airtight container for 3-5 days.

    Hey Amy. Aww 😍 such a splendid recipe as always. I love reading your blog and Instagram food page it’s super. Much better then mine and I so want to bake the above recipe for Xmas for sure.
