Chunky Monkey Pancakes (Vegan GF)

Thick and fluffy oat blender pancakes studded with chunks of banana and melting chocolate. These peanut butter pancakes are naturally vegan and gluten-free and great for weekend brunches.

Pancake day may be a few weeks behind us now, but the desire for pancakes is still strong. Whether it’s a leisurely weekend brunch or a speedy breakfast midweek, these Chunky Monkey Pancakes are a great option fresh or out the freezer/fridge if you’ve prepared some pancakes beforehand. They keep really well and are just as light and fluffy the second time round.

The base for these Chunky Monkey Pancakes is similar to my favourite oat-blender pancakes and my recent Raspberry Tiramisu Pancakes as I just love using oats as the base. Make sure to use gluten-free oats if needed, and either way, they’re wholesome, full of fibre and easy to find. 

Let’s talk quickly about the “chunky monkey” flavour as it’s pretty delicious. Banana, chocolate and peanut butter are a match made in heaven! You may have seen chunky monkey banana bread or even ice cream, it’s simple but delicious every time.

The rest of the ingredients are simple:

  • Oats: as mentioned above, make sure they’re certified gluten-free if needed.
  • Banana: the riper the better as the flavour is sweeter and the texture is softer. You could use apple puree instead, or even mashed sweet potato.
  • Chia seeds: these help to bind the pancakes and add some extra goodness.
  • Peanut butter: in the batter this adds a wonderful peanut butter flavour! For another option use almond butter or for a nut-free option, use tahini or sunflower seed butter.
  • Plant-based milk: any carton of milk will do.
  • Baking powder: for the rise.
  • Dark chocolate: for the melty chunks of chocolate inside. I used a dark ginger one here, but any dark chocolate (or dairy-free milk chocolate) will work.
  • Dried banana chips: I hardly ever have these but they’re so delicious. Slightly chewy and slightly firm, they’re so good in pancakes. Make sure to use ones without added sugars and if you can’t find any, use regular banana slices.

Simply add all of the ingredients to a blender and blitz until smooth before leaving the Chunky Monkey Pancake batter to rest – it will thicken as it rests. Then heat some oil in a non-stick frying pan and spoon the batter into circles. Keep going to use all of the batter and then the fun part: stacking the pancakes!

For these Chunky Monkey Pancakes, I went for coconut yoghurt, extra banana pieces, chopped chocolate, melted chocolate, peanut butter and some fresh or warmed berries. But you can top these pancakes however you like… the possibilities are endless.

Ingredients

    Pancakes:
  • 120g oats
  • 1 ripe banana
  • 1 tbsp chia seeds
  • 2 tbsp peanut butter
  • 200ml plant-based milk
  • 1 tsp baking powder
  • 40g dark chocolate, chopped
  • 100g dried banana chips
  • Oil, for frying
  • Serving suggestions:
  • coconut yoghurt, dried banana chips, chopped chocolate, melted chocolate, peanut butter, berries/pomegranate

Directions

  1. Add the oats, banana, chia seeds, peanut butter, milk, baking powder and sugar to a blender and blend until smooth. Leave to rest for 5 minutes. Stir through the chocolate.
  2. Heat a large non-stick frying pan with a little oil and add ¼ cup of batter per pancake. Shape into a circle and top with 5-6 chewy banana pieces. Once bubbling and cooked underneath flip over to cook on the second side. Repeat to make all the pancakes.
  3. In between pancakes, remove any melted chocolate left in the pan as it will catch and burn.
  4. Serve warm stacked and topped with some yoghurt, extra peanut butter, chewy banana pieces, chopped chocolate, melted chocolate and fresh berries.
