Apple and Vanilla Quick Soak Overnight Oats (Vegan GF)

Creamy and wholesome overnight oats that are ready in one hour. Made with grated apple, coconut yoghurt and chia seeds, these oats are healthy, delicious and naturally vegan, gluten-free and refined sugar free.

I love overnight oats for breakfast but so often, I don’t think the night before and wake up with the urge for oats. This is where this recipe Apple and Vanilla Quick Soak Overnight Oats came from. I shared a few stories on my social media recently and I had a few requests for the recipe, so I thought I’d actually make this one, photograph it and properly write down the recipe. And here it is!

These Apple and Vanilla Quick Soak Overnight Oats are super creamy even though they only need about an hour soaking time. That said, if you do want to make these the night before, follow the same ingredients and method below and they are even creamier the next day. There are only a few ingredients needed for these oats but they’re mighty when combined:

  • Grated apple: I love adding apple to my oats, it bulks them out making them more fulling, wholesome with more fibre, too, and an extra portion of fruit. It adds to the creamy texture and helps to bind these quick soak oats together, too. You could also use mashed banana or grated pears. Leave the skin on for texture and fibre.
  • Oats: the base for these quick soak oats! Make sure they are gluten-free certified if needed.
  • Chia seeds: these absorb liquid and make these oats really creamy. The longer they soak, the more liquid they absorb but they’re ready in an hour.
  • Vegan vanilla protein powder: I love adding a bit of a boost to my breakfasts and think that protein powders make the oat texture even creamier, but you can skip it if you’re not a fan.   • Cinnamon: for flavour and it works so well with apple.
  • Coconut yoghurt: this adds to the creamy texture without an overpowering coconut taste. The thicker the yoghurt, the better in terms of texture for these quick soak oats. You could use another plant-based yoghurt, too.
  • Plant-based milk: any milk will do just think about any flavours you’re adding to the oats. I like oat or almond here but coconut works so well, too.

Simply stir together all the ingredients for these Apple and Vanilla Quick Soak Overnight Oats together in a bowl or jar, cover and pop in the fridge for an hour while you get ready. When it’s time to eat, give the oats a quick stir, add a splash more milk if needed and then serve with your favourite toppings.

Pictured here, I added extra coconut yoghurt, warmed blueberries and a splash more plant milk, as well as some cacao nibs, chia seeds and some vegan honey. You could also add some nut butter, granola or other fruits, too.

These Apple and Vanilla Quick Soak Overnight Oats are so versatile when it comes to serving them, so go wild or just eat them as they are. If you do remember the night before, follow the same recipe to make these oats into proper overnight oats, but they are a life saver in the morning when you fancy creamy, chewy, hearty oats but don’t have 8 hours spare.

Creamy and wholesome overnight oats that are ready in one hour. Made with grated apple, coconut yoghurt and chia seeds, these oats are healthy, delicious and naturally vegan, gluten-free and refined sugar free.

Ingredients

  • 2 small apples, grated
  • 100g oats
  • 20g chia seeds
  • 2 scoops vegan vanilla protein (approx. 60g) or 1/2 -1 tsp vanilla essence
  • 1 tsp cinnamon
  • 60g coconut yoghurt
  • 400-460ml plant-based milk
  • To serve:
  • 40g coconut yoghurt
  • 100g blueberries, warmed
  • Optional: cacao nibs, chia seeds, vegan honey/maple syrup

Directions

  1. Prepare the oats by adding all of the ingredients to a bowl or jar and stir well. Cover the oats and leave to rest in the fridge for 1-2 hours. You can also leave the oats to soak overnight.
  2. If needed, add a splash more milk and then serve in two bowls topped with the yoghurt, blueberries and other toppings.
