Peanut Butter Oreo Crispy Squares (Vegan GF)

Chewy, sticky and peanut buttery rice crispy squares loaded with crushed Oreos. These snacks or dessert are vegan, gluten-free and only need 4 basic ingredients and 5 minutes to make.

I love rice crispy bars and ever since my Vegan Protein Rice Crispy Bars, I have been waiting for the perfect opportunity to make a new recipe and this is it. As well as being bar obsessed, I also love baking with cookies and biscuits, so these Peanut Butter Oreo Crispy Squares combine a few of my loves:

  • Peanut butter

And they taste amazing! They are like chewy sticky sweet peanut butter with crispy crunchy cereal all laced with Oreo flavour and crunchy cookies. I can’t believe how good they are for only needing 4 ingredients. You can also play around with the ingredients depending on what you have to hand, this recipe really isn’t that precise. Here is what goes into these Peanut Butter Oreo Crispy Squares:

  • Rice crisped cereal: any puffed cereal will work here and make sure it is gluten-free where needed as some do add barley and wheat to rice (annoyingly!)
  • Oreo biscuits: these are essential for the Oreo element to these rice crispy bars. There are so many supermarket alternatives to these cookies and cream biscuits, so feel free to use any “Oreo-style” cookies here. You will also have to find gluten-free cookies for these bars but there are so many delicious options nowadays.
  • Peanut butter: the runny smooth peanut butter is best for this recipe as it melts more easily with the syrup, but you can use any. I can imagine a little bit of peanut crunch would also be nice. If you are avoiding peanuts, you can also use almond or cashew butter or use tahini or sunflower seed butter for a nut-free option.
  • Maple or agave syrup: or any similar sticky syrup to help bind these bars. Melt this down with the peanut butter to make the sticky mix to hold these bars together.

Stir all of the above together and allow to chill and then slice into bars – it really is that simple. You can make these in less than half an hour if you pop them in the freezer, too. They are fairly sticky at room or fridge temperature, so it’s a good idea to freeze them for the neatest slices.  

Once they are out, all that is left is to:

  • Drizzle in dark chocolate
  • Sprinkle over extra Oreo biscuits

The above two steps are not essential but take these Peanut Butter Oreo Crispy Squares to the next level. More chocolate is always needed, right? I love the sticky sweet, slightly crunchy, slightly chewy texture of these bars. They are delicious with a cup of tea or coffee, too. Or just enjoy the straight form the fridge on their own. They would also be so fun to make for a picnic or afternoon tea with friends and family.

Plus, as they are so fun and easy to make, you can spend some time with little ones in the kitchen whipping up these Peanut Butter Oreo Crispy Squares. And then you get to eat them together.

Chewy, sticky and peanut buttery rice crispy squares loaded with crushed Oreos. These snacks or dessert are vegan, gluten-free and only need 4 basic ingredients and 5 minutes to make.

Ingredients

  • 80g rice crisped cereal (GF if needed)
  • 100g Oreo biscuits, crushed (GF if needed)
  • 120g runny smooth peanut butter
  • 120ml/160g maple or agave syrup
  • To serve: melted chocolate, extra Oreo biscuits

Directions

  1. Line an 8-inch square tin with parchment paper.
  2. Add the rice crisped cereal and crushed biscuits to a large mixing bowl and stir.
  3. To a saucepan, add the peanut butter and syrup and heat until melted and combined. Pour over the rice crispy mix and stir well.
  4. Pour into the dish and smooth over the top, pressing down to compact the mix. Either chill in the fridge for 30-40 minutes or in the freezer for 20 minutes.
  5. Once firm, slice into 9 squares and drizzle with chocolate and extra crushed biscuits, if desired. Store in an airtight container in the fridge for 5-7 days.
