What ingredients go into this Vegan Chocolate Brownie Skillet for 2?
You may be surprised how simple these are:
Coconut oil: this adds a lot of the fat needed to keep the brownie rich and melt in the mouth. You can swap this for vegan butter, too.
Chocolate: one half of the chocolate is melted into the coconut oil to create a lot of the richness and the remaining chocolate is used as melting chips inside the batter.
Coconut sugar: this adds a lovely richness and caramel flavour to the skillet but other sugars like light brown or golden (or white) caster sugar will also work.
Almond or cashew butter: are best for a naturally sweet taste and delicious texture to these brownies. Other nut and seed butters will work depending on allergies or what is available to you.
Vanilla essence: for the sweet flavour.
Banana: ripe banana is best for the sweeter flavour and softer texture. Mash the banana into the batter which adds moisture, sweetness and helps to bind the mix. Applesauce or even mashed sweet potato or pumpkin will also work.
Cacao powder: for a big dose of chocolatey richness. Cocoa powder will also work, too.
Oat flour: this keeps the skillet naturally gluten-free and adds a dose of wholefoods to the mix. Just blitz up whole or rolled oats into a fine flour. I imagine plain white flour will also work.
Bicarbonate of soda: for the rise.
Salt: to enhance the flavours.
Chocolate banana pieces: this Vegan Chocolate Brownie Skillet for 2 was originally made with the deliciously chocolatey and chewy chocolate covered banana from Natures Heart which inspired this banana-based brownie. You can use any chocolate covered fruit or nut. Or use extra chocolate chips.
How do I make this skillet?
The best part of this brownie is that it comes together easily:
Melt the coconut oil and chocolate: until warm and glossy.
Whisk in the sugar, nut butter, vanilla and mashed banana: until smooth.
Stir together the dry ingredients: until no specks of oat flour remain.
Fold in the add-ins: and pour into a skillet.
Smooth over the top: adding extra chocolate chips.
Bake for 18 minutes: or until starting to crisp at the edges but still gooey in the middle.
Enjoy warm or cold: with scoops of dairy-free ice cream.
Is this dessert gluten-free and nut-free?
Yes, this is naturally gluten-free as we use oat flour, just make sure your oats are certified gluten-free. To make this skillet nut-free, opt for seed butter like tahini or sunflower seed butter instead.
How long will this last?
It is best eaten warm from the oven but also tastes great cold and will last for 1-2 days in the fridge.
Can I make this for more than 2 people? Or just for one?
Yes, of course! To keep the bake time the same, o would recommend doubling the mix and baking it as two skillets and then adding four spoons and digging in. You can also half all of the mix to make this brownie skillet for 1, just check the brownie after 12 minutes and adjust the size of the skillet needed.

Ingredients
30g (2 tbsp) coconut oil
50g chocolate, chopped or in chips (divided), plus extra
30g (2 tbsp) coconut sugar
45g (3 tbsp) almond or cashew butter
1 tsp vanilla essence
½ large banana (60g), mashed
25g (1/4 cup) cacao powder
25g (1/4 cup) oat flour
¼ tsp bicarbonate of soda
A pinch of salt
30g dark chocolate banana pieces, plus extra
Dairy-free vanilla ice cream
Directions
Preheat the oven to 160Fan/180*C and light grease a skillet or ramekin (approximately 14cm, or 51/2 inches diameter).
Melt together the coconut oil and 25g of chocolate and pour into a mixing bowl.
Add in the coconut sugar, almond or cashew butter, vanilla and mashed banana and whisk until smooth.
Now stir in the cacao powder, oat flour, bicarbonate of soda and salt and stir to a smooth, thick batter (do not overmix). Fold in the rest of the chocolate chips and the Dark Chocolate Covered Banana Pieces.
Pour into the skillet/ramekin and smooth over the top, sprinkle on extra chocolate, if desired.
Bake for 18 minutes or until crisping at the edges but tender and gooey in the middle.
Allow to cool for 5 minutes then serve with ice cream and extra Dark Chocolate Covered Banana Pieces, if you like.
Without the ice cream, once cool, this brownie will keep for 1-2 days in the fridge wrapped well, although best eaten straight away. You can also freeze the brownie (check your skillet/ramekin is OK with this) and de-frost and eat the same day. To warm back up, pop it in the oven, covered for 5 minutes or microwave for 10 second intervals until warm.
