This No Yeast Single Serve Cinnamon Roll is a delicious 20-minute recipe when you need a cinnamon roll fast. Thick, fluffy and tender no-yeast dough filled with cinnamon sugar and tipped with icing sugar glaze.
The recipe for this No Yeast Single Serve Cinnamon Roll has been a long time coming. I’ve made small batch protein cinnamon rolls and I’ve made lots of no-yeast dough recipes, so it was only a matter of time before the single serve no-yeast recipe was born. This bun is something special and so easy to make.

What ingredients do I need?
The dough for this No Yeast Single Serve Cinnamon Roll is based on my favourite magic dough:
Thick dairy-free yoghurt: I always use coconut yoghurt for the best results. Th thicker the better and the roll will not work with runny yoghurt.
Caster sugar: just a little to sweeten the dough and other sugar like light brown or coconut sugar will also work.
Self-raising flour: this makes the dough super light and fluffy. You can also use a gluten-free self-raising flour blend with xantham gum (read this post for advice on swapping to gluten-free flour).
Salt: to enhance the flavours.
Onto the filling:
Vegan butter: or coconut oil but I prefer the flavour of vegan butter here.
Light brown sugar: I prefer a light brown, demerara or coconut sugar for filling as it’s richer and has a slight crunch.
Cinnamon: no cinnamon roll is complete without cinnamon.
Finally, the glaze:
Thick dairy-free yoghurt: as above, the thicker the better and I also used coconut yoghurt here.
Icing sugar: this adds the classic glaze on top of the No Yeast Single Serve Cinnamon Roll.
How do I make this No Yeast Single Serve Cinnamon Roll?
The method is very simple and almost identical to all other cinnamon rolls apart from the last part:
Make the dough: stir together the ingredients and bring to smooth dough.
Roll out to rectangle: making it as neat as possible.
Brush with butter: and sprinkle with the cinnamon sugar.
Slice the rectangle in half lengthways: so you have two long strips.
Roll one strip up into a roll: like a regular cinnamon roll.
Place this roll on top of the second strip: and roll this around the first roll to make one larger roll.
Place into a greased ramekin: and brush with butter.
Bake until golden and fluffy: and allow to cool slightly.
Cover with the frosting: and dig in.
Is this No Yeast Single Serve Cinnamon Roll gluten-free and nut-free?
Yes, this recipe is easily gluten-free, just use your preferred GF self-raising flour and read this blog post for advice on ratios of wet to dry. This recipe is naturally nut-free, just check that your yoghurt and butter are free from nuts.
Like most dough recipes, it will be best on the day it is made, but you can also enjoy it the day after. Store the bun in a sealed container at room temperature.

This No Yeast Single Serve Cinnamon Roll is a delicious 20-minute recipe when you need a cinnamon roll fast. Thick, fluffy and tender no-yeast dough filled with cinnamon sugar and tipped with icing sugar glaze.
Ingredients
For the dough:
50g thick dairy-free yoghurt
1 tsp caster sugar
50g self-raising flour
A pinch of salt
For the filling:
15g vegan butter, melted
1 tbsp light brown sugar
½ tsp cinnamon
For the glaze:
½ tsp thick dairy-free yoghurt
3 tbsp icing sugar
Directions
Preheat the oven to 160Fan/180*C and grease a small ramekin. Stir together the light brown sugar and cinnamon for the filling.
Stir together the yoghurt and sugar for the dough then stir in the flour and salt to a shaggy dough.
Tip onto a lightly floured surface and bring to a smooth dough with your hands, kneading for 1 minute.
Roll out the dough to 20cm x 10cm (approx.) and spread with most of the melted butter. Sprinkle over the cinnamon sugar.
Slice the dough in half lengthways (so you have two strips about 20cm x 5cm in size. Start with one of the strips of dough and roll it up tightly. Now place this roll on top of the second strip and roll the second strip around it to make one larger cinnamon roll.
Place the cinnamon roll into the greased ramekin and brush with the remaining melted butter.
Bake for 15 minutes or until golden, risen and cooked through. Allow to cool and then remove from the ramekin.
Stir together the yoghurt and icing sugar for the frosting and spread all over the cinnamon roll. Enjoy the same day or the day after, keeping the roll in a sealed container at room temperature.
