These No Bake Cookie Dough Stuffed Chocolate Cookies are the best no bake cookie for chocolate chip lovers: a rich no bake chocolate cookie stuffed with a delicious chocolate chip cookie dough. These are vegan, gluten-free and ready in 10 minutes.

This recipe is a winner for when the cookie dough and cookie cravings hit. They have the best of both worlds: edible cookie dough and no bake cookies all rolled into one before being dipped in more chocolate. What’s not to love? I did struggle knowing what to call these no bake cookies as they have no bake cookie dough and a no bake chocolate cookie – it felt like too much “cookie” but that’s the very essence of these beauties, so let’s go with it.

These cookies are the chocolate dream, they are:

  • Rich and chocolatey
  • Sweet and salt
  • Stuffed with a chocolate chip cookie dough filling
  • With a rich chocolate cookie outside
  • Tender, soft and moreish
  • Easy to make in 2 bowls in 10 minutes
  • Made with only 9 store cupboard ingredients
  • Vegan, gluten-free with nut-free options

What ingredients go into these No Bake Cookie Dough Stuffed Chocolate Cookies?
The cookie dough filling and the cookie use mostly the same ingredients, so don’t be put off by the seemingly long list.
For the cookie dough:

  • Peanut butter: the runny, smooth natural peanut butter works best here, and other nut or seed butters will also work like cashew, almond, sunflower seed or tahini.
  • Maple syrup: for the sweetness and to help create the perfect texture. Other syrups like agave, date, coconut or vegan honey will work.
  • Vanilla essence: for the classic cookie dough flavour.
  • Oat flour: grind your oats into oat flour for these no bake cookies. It’s important to not swap this for other flour which is not safe to eat un-baked. Coconut flour is safe to eat raw, although it absorbs much more liquid so I’d suggest sticking to oat flour.
  • Ground almonds: I love the texture and naturally sweet taste this adds to the cookie dough. If you avoiding nuts, you can see ground up sees like sunflower or pumpkin or use more oat flour. Or try another ground up nut, like hazelnut, or swap for more oat flour.
  • Salt: to enhance the flavours.
  • Chocolate chips: to make the cookie dough chocolate chip cookie dough. Or you can use a bar of chocolate, chopped up.

And for the chocolate cookie mix:

  • Peanut butter: or, another nut or seed butter as above.
  • Maple syrup: any sticky syrup will do.
  • Coconut oil: this helps to make the cookie firmer when it chills.
  • Vanilla essence: for the cookie flavour.
  • Oat flour: as above, you can grind your own oats and I don’t recommend swapping this for other flour.
  • Ground almonds: other nuts or seeds ground up will be fine (not chia of flaxseed though as these absorb too much liquid). You could swap this for more oat flour.
  • Cocoa powder: or cacao powder, as long as it is 100% raw cocoa/cacao.
  • Salt: for the flavour.

For decorating these No Bake Cookie Dough Stuffed Chocolate Cookies, we need:

  • Dark chocolate: any chocolate will do but I prefer darker chocolate. You can use other dairy-free chocolates and try a flavoured chocolate bar, too.
  • Coconut oil: this helps to make the melted chocolate more glossy and results in a shiner chocolate dip. It is not essential though.

How do I make these no bake cookies?

The method is really simple and can be made in just a few steps:

  • Make the cookie dough: by stirring together all the ingredients and then chilling in the fridge.
  • Make the chocolate cookie mix: stir together the ingredients to a thick dough.
  • Divide the chocolate cooks into 8: and roll into balls.
  • Shape the chilled chocolate chip cookie dough into 8 balls: for the centre of the cookies.
  • Take one ball of chocolate cookie and make an indent: using your finger or thumb.
  • Place the chocolate chip cookie dough into this indent: and wrap the chocolate cookie around to seal in all the edges.
  • Flatten the stuffed cookie: just slightly and chill in the fridge.
  • Melt the chocolate and coconut oil: and pour into a bowl or glass.
  • Dip each stuffed cookie into the chocolate: allow the excess to drip off and place on a piece of parchment.
  • Decorate with extra cookie dough and flaky salt: and enjoy these No Bake Cookie Dough Stuffed Chocolate Cookies.

How long will these cookies last?

As these are no bake they keep well in the fridge in a sealed container for 1 week or you can freeze them for 1 month, too. Eat them straight from the fridge or allow to reach room temperature where there will be softer.

Are these cookies gluten-free and nut-free?

These no bake cookies are gluten-free as long as you use gluten-free certified oats. To keep these nut-free, opt for seed butter like tahini or sunflower seed butter and use ground sunflower or pumpkin seeds or all oat flour and check that your chocolate is nut-free.

Ingredients

    For the Cookie Dough:
  • 60g peanut butter
  • 2 tbsp maple syrup
  • 1 tsp vanilla essence
  • 30g oat flour
  • 30g ground almonds
  • A pinch of salt
  • 50g chocolate chips
  • For the Chocolate Cookies:
  • 120g peanut butter
  • 60ml maple syrup
  • 1 tbsp coconut oil, melted
  • 1 tsp vanilla essence
  • 90g oat flour
  • 90g ground almonds
  • 20g cocoa powder
  • A pinch of salt
  • For Decorating:
  • 60g dark chocolate
  • 1 tsp coconut oil

Directions

  1. Firstly, make the cookie dough: stir together the peanut butter, maple syrup and vanilla essence until smooth. Stir in the oat flour, ground almonds and salt and bring to a sticky dough. Fold in the chocolate chips and place in the fridge.
  2. Now make the chocolate cookies: stir together the peanut butter, maple syrup, coconut oil and vanilla essence until smooth. Now add in the oat flour, ground almonds, cocoa powder and salt. Stir to a smooth cookie dough and divide into 8 pieces. Roll these into balls.
  3. Divide the chocolate chip cookie dough into 8 small balls using approximately 1 tsp of cookie dough. Roll the leftover into small balls.
  4. Take one ball of chocolate cookie and make an indent using your thumb. Place the chocolate chip cookie dough ball inside and wrap the chocolate cookie around the centre to seal in all the edges. Roll into a circle and then flatten down onto a parchment lined tray to form a circle cookie. Repeat to make 8 cookies.
  5. Chill in the fridge for 10 minutes while you melt the chocolate with the coconut oil.
  6. Dip each cookie into the chocolate and allow the excess to drip off. Place onto a parchment lined tray and decorate with some of the extra cookie dough.
  7. Eat straight away or keep in the fridge for up to 1 week or in the freezer for up to 1 month. I like to eat them at room temperature, so take them out the fridge for 20 minutes before eating.
