Salted Caramel Granola Yoghurt Bark (Vegan Gluten-Free)

A fresh and creamy summertime snack, this Salted Caramel Granola Yoghurt Bark is easy to make in 10 minutes with 6 healthy, vegan and gluten-free ingredients (plus it’s high in protein).

If you love a good snack (and who doesn’t) and fancy something cooling and refreshing then this yoghurt bark is perfect. It’s not as rich and indulgent as an ice cream but ticks the boxes of being creamy, refreshing, cooling and delicious. I’ve flavoured my yoghurt bark with salted caramel and topped it off with granola and some chocolate chips making it fuss-free and easy to make.

What ingredients do I need?

There are only 6 ingredients:

  • Thick yoghurt: I use vanilla coconut yoghurt as it has simple ingredients and a lovely vanilla flavour but you can use any flavour. It has to be thick for the best bark and other Greek-style dairy-free yoghurts will also work.
  • Vegan salted caramel protein powder: this turns the yoghurt into the best protein mix and I love the salted caramel blend from Macromike, it’s so smooth. I also now have a discount code for their range: MM-AMY-10 for 10% off everything. Other flavours and brands will also work.
  • Maple syrup: just a little helps make this yoghurt bark even smoother and you can swap this for agave or date syrup, for example, or vegan honey.
  • Vegan caramel sauce: this is my favourite cheat’s caramel recipe of which I always have a jar in the fridge. I’ve added the recipe below or you can use ant vegan caramel sauce, for example the Natures Charm one is delicious.
  • Granola or crunchy muesli: for sprinkling on top. You could even break up my Banoffee Granola Bark for adding on to this Salted Caramel Granola Yoghurt Bark.
  • White chocolate chips: because they work so well with salted caramel favours.
  • Dark chocolate shavings: for extra chocolate goodness. This is not essential but I love the contrast in sweet and richness.

How do I make this Salted Caramel Granola Yoghurt Bark?

This snack is so easy and quick to make in a few steps:

  • Stir together the yoghurt, protein and syrup: till smooth.
  • Spread the mix into a tin: and smooth over the top to about 1-cm thick.
  • Drizzle over the caramel and sprinkle with granola: all over the top.
  • Add on the chocolate chips: and then freeze for 4-6 hours or overnight.
  • Before serving add the shaved dark chocolate: to add some more chocolate.
  • Break up this yoghurt bark into shards: and enjoy.

How do I store this Salted Caramel Granola Yoghurt Bark?

When you’re not eating this bark, keep it stored, covered well, in the freezer as it starts to melt quite quickly. You can store it this way for up to 1 month.

How do I make my own caramel sauce?

This uses my favourite quick caramel recipe and if you don’t want to have any leftovers, follow this recipe. Stir together 1 tbsp runny smooth nut or seed butter with ½ tbsp melted coconut oil and ½ tbsp maple syrup till smooth. You can add a pinch of salt for a salted caramel, too.

Is this recipe nut-free and gluten-free?

Yes, this is free of nuts as longs as your yoghurt, granola and caramel sauce do not contain nuts. Check that your granola is also gluten-free, where needed.

Can I add other toppings?

Yes you can use this as a base recipe for any number of combinations:

  • Peanut butter and berries: swap the caramel for peanut butter and add fresh berries.
  • Tahini pistachio: swap the caramel sauce for tahini and add pistachios instead of granola.
  • Triple chocolate: add some chocolate sauce or chocolate spread instead of the caramel and add even more chocolate chips or chunks on top.

These Cheesecake Stuffed Strawberries and Raspberries are an easy and delicious healthy snack great for summer and all year long. They are quick to prepare, naturally vegan and gluten-free.

Ingredients

  • 250g thick vanilla coconut yoghurt
  • 20g salted caramel vegan protein powder
  • 2 tbsp maple syrup
  • 2-3 tbsp vegan caramel sauce (see above)
  • 2-3 tbsp granola or muesli
  • 2 tbsp white chocolate chips
  • 1 tsp dark chocolate shavings, optional

Directions

  1. Line a baking tray with parchment paper.
  2. Whisk together the yoghurt, protein powder and maple syrup till smooth.
  3. Pour into the lined tray and smooth out to a layer about 1-cm thick.
  4. Swirl on the caramel sauce and sprinkle over the granola and white chocolate chips. Freeze for 1 hour till set then cover with clingfilm and freeze for 4-6 hours or overnight till set firm.
  5. Sprinkle over some chocolate shavings and break apart. Enjoy straight away or keep in the freezer in a Ziploc bag for 2-4 weeks.
