Rather than pasta, this summery salad uses gnocchi (which I am obsessed with) and has tons of rich and light flavours, lots of vegetables, protein and is so quick and easy to make. Gnocchi only takes 2-3 minutes to cook meaning this Gnocchi Chickpea and Feta Salad comes together in only 10 minutes.

This salad is on repeat at home, we have it every other week it seems! And I am not complaining. This gnocchi salad is:

What ingredients do I need?

You only need a handful of healthy ingredients to make this:

  • Gnocchi: this Gnocchi Chickpea and Feta Salad comes together more quickly if you have ready-made gnocchi from the shops (they are not all vegan and/or gluten-free so please read the labels) or you can make your own. I love my sweet potato or cauliflower gnocchi here, and make this ahead of time as the gnocchi will keep for a few days once cooked.
  • Cherry tomatoes: the sweet crunchy tomatoes are my favourite.
  • Cucumber: chopped cucumber adds colour and crunch to this Gnocchi Chickpea and Feta Salad.
  • Dairy-free feta cheese: I love adding feta cheese to salads as it’s salty, tangy and savoury. I like the Violife one or supermarkets have own-brand ones, too.
  • Spring onion: for a bit of heat and make sure you use the white and green parts.
  • Olives: I prefer green olives as shown here but black olives are also great. The larger, plumper ones are my favourite as they are juicier.
  • Chickpeas: these add protein to this meal, making it balanced and nutritious. You can try other beans like cannellini or butterbeans, too.
  • Freshly basil: this adds tons of Mediterranean flavour to this gnocchi salad.

As for the dressing, this is really easy to make:

  • Olive oil: extra virgin olive oil is best if you can, as the flavour is richer and the colour is stronger but you can use other olive oils, too. I do not recommend swapping this for any other oil.
  • Balsamic vinegar: for tang and richness.
  • Lemon juice: for some zing. You can also use lime if you prefer.
  • Garlic: this adds some rich flavour and heat without being overpowering.
  • Salt and pepper: for seasoning.

How do I make this salad?

This is so easy to make in a few minutes:

  • Cook the gnocchi according to the pack: this takes about 2-3 minutes or use your made gnocchi here. Allow to cool.
  • Chop up all the vegetables: to small pieces along with the chickpeas and feta.
  • Whisk together all the dressing ingredients in a large mixing bowl: till fully mixed.
  • Add in the gnocchi and all the other ingredients: and toss really well.
  • Chill in the fridge until needed: and enjoy.

How long will this last?

You can make this Gnocchi Chickpea and Feta Salad up to 2-3 days before you want to eat it. I like to add more fresh basil just before serving to add more flavour.

Is this salad gluten-free and nut-free?

Yes this is naturally free of gluten and nuts, please just check your gnocchi (if buying it ready-made) and check that your dairy-free feta cheese does not contain nuts.

This Gnocchi Chickpea and Feta Salad is fresh, delicious and packed with Mediterranean flavours and dairy-free feta. It is high-protein, naturally vegan and gluten-free and is ready in 10 minutes.

Ingredients

    For the Salad:
  • 500g gnocchi
  • 200g cherry tomatoes
  • 100g cucumber
  • 60g dairy-free feta cheese
  • 1 large spring onion
  • 60g olives, pitted weight
  • 1 tin chickpeas (240g drained weight)
  • 2 tbsp freshly chopped basil
  • For the Dressing:
  • 4 tbsp (1/4 cup, 60ml) olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp lemon juice
  • 1 large garlic clove
  • Salt and pepper

Directions

  1. Cook the gnocchi according to the packaging instructions and leave to cool slightly.
  2. Chop the tomatoes in ¼ or ½ and chop the cucumber small. Crumble the feta cheese and dice the spring onion. Half the olives and drain and rinse the chickpeas.
  3. In a large mixing bowl, whisk together all the ingredients for the dressing. Add in the gnocchi, prepared tomatoes, cucumber, feta cheese, spring onion and olives. Toss well and stir through the basil (as long as the gnocchi is cold).
  4. Serve straight away or keep in a sealed container for 2-3 days in the fridge.
