Raspberry Lemon Kombucha Mojito

This healthier, low sugar and vibrant Raspberry Lemon Mojito is easy and quick to make with 5 ingredients. packed with real raspberries, lemon and mint, it’s topped with kombucha for a gut-healthy alcoholic or non-alcoholic tipple.

I just love kombucha and drink one most days. My go-to brand is Remedy Drinks (I am in the UK) as their range of flavours is amazing, and I love that they contain no sugar thanks to their long age brew. All kombucha will differ but I love the light fizz and sparkle of the Remedy drinks and so to celebrate World Kombucha Day (21st February 2023, yes, the same day as Pancake Day this year) I have created the best low-sugar and healthy drink.

Why will I love this mojito?

This mojito is the dreamiest, it is:

  • Fruity, fresh and naturally sweet
  • Zingy, zesty and minty
  • Packed with real raspberries, lemon and muddled mint

  • Contains no added sugars
  • Great to make for friends and family to celebrate

What ingredients do I need?

We only need 5 basic ingredients to make these drinks and see below for my favourite products to use:

  • Fresh raspberries: these are essential for the recipe as they muddle down at the bottom to add a pop of juiciness and fruitiness.
  • Fresh mint: this is for muddling with the raspberries for a real fresh and herby flavour and I also like to add a sprig of mint as a stirrer at the end.
  • Lemon: use a fresh lemon and squeeze out the juices for this delicious drink. If you prefer to keep it classic, you can use lime.
  • Vodka, white rum or non-alcoholic spirit: use your preferred clear spirit like vodka, white rum or even gin for this recipe. To keep it alcohol-free, make this mocktail with an alcohol-free spirit, like Caleno, Pentire, Atopia or Seedlip, for example. I really love the CleanCo 0% gin, too (linked below).
  • Remedy raspberry lemonade kombucha: the inspiration for this coktial/mocktail. I love their range, and this flavour works perfectly with the fresh fruits and mint.
  • Ice cubes: to serve.

How do I make this drink?

This is a breeze to make:

  • Add the fresh raspberries, mint and some lemon juice to a bowl: and mash with a fork.
  • Divide between two glasses and top with a measure of spirit: add some more fresh lemon and stir.
  • Pour over the kombucha to the top: and add the ice cubes.
  • Decorate with a sprig of mint, more raspberries and lemon: and sip away.

How do I make the sugar rim?

This is optional but really upgrades your drinks:

  • Pour some water or lemon juice into a shallow bowl
  • Pour some sugar or sugar-alternative into a second shallow bowl
  • Dip the rim of the glass into the water or lemon juice and allow the excess to drip off
  • Now drip the wet rim into the sugar and shake off any excess
  • Use straight away

Does this contain alcohol?

This can be a cocktail or a mocktail. If you want to make this alcohol-free, use one of the 0% spirits mentioned above (or your preferred one) or skip the alcohol all together and just use the kombucha.

Is this drink gluten-free, nut-free and sugar-free?

This is fully gluten-free, nut-free and contains no added sugars. The only sugars will be from the fruits, any in the alcohol or non-alcoholic spirits and remedy kombucha is low/no-sugar.

How long will this last?

This is best enjoyed fresh within 5 minutes of making it.

This healthier, low sugar and vibrant Raspberry Lemon Mojito is easy and quick to make with 5 ingredients. packed with real raspberries, lemon and mint, it’s topped with kombucha for a gut-healthy alcoholic or non-alcoholic tipple.

Ingredients

  • 120g fresh raspberries
  • 2 sprigs fresh mint, plus extra to serve
  • 1 lemon, sliced into 6 wedges
  • 50ml vodka, white rum or alcohol-free alternative
  • 2 x Remedy Raspberry Lemon Kombucha
  • Ice cubes, to serve
  • Optional: sugar alternative or sugar, for the rim

Instructions

  1. Optional: dip the rim of two glasses in water and allow the excess to drip off. Now dip the wet rim into sugar and allow excess to drip off.
  2. Place 100g raspberries in a bowl and add the fresh mint leaves. Squeeze over the juice of 2 lemon wedges and mash with a fork to muddle.
  3. Divide the muddled raspberries between two glasses and squeeze over 1 lemon wedge into each jar. Drop the lemon wedge into the glass and pour in 25ml measure of vodka or non-alcoholic spirit. Stir quickly.
  4. Pour over the Remedy Raspberry Lemon Kombucha, add in some ice cubes, an extra lemon wedge, the extra raspberries and stir together with a fresh mint sprig.
  5. Enjoy straight away.
