Here I share my favourite vegan recipes that are not only delicious, but they are vibrant, wholesome and designed to nourish you from the inside out with vegan and vegan curious followers.
These jars of Strawberry Overnight Weetabix are thick, creamy and taste like cheesecake. They are a great alternative to oats and are ready with less than 5 minutes prep time with only 5 vegan, gluten-free and nut-free ingredients.
If you love overnight oats and are looking to switch up your morning meal then these cheesecake breakfast jars are the best recipe. They are made with only 5 ingredients, and are so easy to make (maybe even quicker and easier than overnight oats as you don’t even need to stir them). They use wholefood ingredients and are really delicious. These are part of my ongoing love for Weetabix (see my loaf cake, chocolate truffles and flapjack bars for more).

What ingredients do I need?
The ingredient list is simple:
Weetabix: these are the star of the show. Crumble these up into small pieces for the smoothest cheesecake base. I use the Weetabix brand, who also have Oatibix and protein-Weetabix which will all work. Or, use a gluten-free alternative (there are a few in the supermarkets).
Plant-based milk: use your favourite dairy-free milk here like oat, almond, soya or coconut (from the carton).
Thick coconut yoghurt: this is my favourite yoghurt to use as it’s thick, creamy and slightly tangy which is perfect for the cheesecake layer. Use your preferred dairy-free Greek-style yoghurt here.
Strawberry jam: for adding a fruity swirl on top. You can make your own or use shop-bought.
Fresh strawberries: for layering and topping these jars.
These are naturally nut-free (please check your milk e.g. almond milk contains nuts) and to make these jars gluten-free, use a gluten-free Weetabix alternative.
How long will they last?
Cover the jars and keep them in the fridge for 2-3 days.

Ingredients
2 Weetabix
120ml plant-based milk
120g thick coconut yoghurt
1 tsp strawberry jam
3 large (or 8 small) strawberries
Instructions
To make the base: crush the Weetabix and add to the base of a jar. Pour over the milk and press down lightly.
To layer up: chop 2 large strawberries into smaller pieces and lay on top of the Weetabix. Spoon over the yoghurt, smoothing over the top. Swirl on the jam. Slice the third large strawberry and place on top.
To set: cover and place in the fridge overnight.
To eat: in the morning, enjoy this overnight jar with more toppings or as they are.
To store: you can keep these jars, covered for 2-3 days in the fridge.
Notes
Use gluten-free Weetabix where needed and double/triple the recipe to make 2/3 jars.
