Chocolate Berry Dessert Pizza with Caramel Sauce (Vegan Gluten-Free)

These Chocolate Berry Dessert Pizza with Caramel Sauce are the best and most fun sweet treat to make with a golden puffy no-yeast crust, melted chunks of chocolate, caramelised banana and fresh berries.

If you love pizza and also want something to satisfy your sweet tooth then these dessert pizzas are the answer. They are so satisfying, with a no-yeast dough, pools of chocolate, fresh fruit and served with your favourite (dairy-free) vanilla ice cream. These pizzas are great to share and to make as a fun dessert at parties or gatherings. They are also naturally vegan and easily gluten-free, so they are ideal for sharing with loved ones. You can customise the toppings but these are my favourites to combine.

What ingredients do I need?

You can see the full ingredients with weights in the recipe card below and see my favourites in the “shop the recipe” section.

For the dough:

  • Thick coconut yoghurt: or another thick dairy-free yoghurt. It’s important that it is thick and Greek-style so that the dough is thick and soft. I use the Cocos Natural or Vanilla yoghurt here.
  • Self-raising flour: this recipe works well with regular or gluten-free SF flour, so use GF flour where needed. You may need more or less flour, depending on the thickness of your yoghurt, so use as much as you feel is right for a soft texture.
  • Olive oil: this makes the dough extra soft once baked and adds a golden crust.
  • Salt: for flavour.

As for the toppings:

  • Berry jam: I used a seedless raspberry jam but any jam will do. Make sure to leave a border around the edge as the sugar from the jam melts and caramelses onto the edges easily.
  • Banana: these caramelise so nicely in the oven.
  • Berries: I add some strawberries before baking to turn sticky and soft and more strawberries and some blueberries for adding on top.
  • Dark chocolate: do not add this before baking as it will burn. Instead, add the chunks just out of the oven and the heat will melt the chocolate in a few minutes, and you can then spread out the chocolate.
  • Vegan ice cream: I use a dairy-free vanilla but chocolate or salted caramel would also be great.
  • Chopped nuts or granola: for adding some crunch on top. This is optional and leave out the nuts if this pizza recipe needs to be nut-free.

And for the homemade caramel sauce:

  • Runny smooth peanut butter: the runny smooth kind is best for the caramel sauce, and you can also use cashew or almond butter or use tahini or sunflower seed butter for a nut-free sauce.
  • Maple syrup: to make the sauce sticky and sweet. You can also use agave syrup.
  • Coconut oil: this helps with the texture and please note that when it cools, this will make the caramel harden but can easily by warmed up to turn it runny again.

Are these gluten-free and nut-free?

These are easily gluten-free as long as you use gluten-free flour and to make these nut-free, swap the nuts on top for nut-free granola or seeds. Also swap the peanut butter for sunflower seed butter or tahini in the caramel.

How do I make them?

These are ready in a few steps:

  • Mix the flour, yoghurt and olive oil for the dough: until shaggy.
  • Tip onto a lightly floured surface and knead: for 1-2 minutes to reach a smooth ball of dough.
  • Leave to rest for 10 minutes: while you prepare the toppings and preheat the oven.
  • Divide the dough into two and roll into circles: on pieces of parchment paper.
  • Spread with the jam and top with bananas and berries: in any pattern you like.
  • Bake in the oven until fluffy and golden: 5 minutes in the Rapid Cook 400 pizza oven or 10-15 minutes in a regular oven.
  • Add the chunks of chocolate: and leave for a few minutes to melt.
  • Add on other toppings like the caramel sauce: and enjoy.

How long will they last?

Allow the pizzas to cool (without the ice cream) and wrap up well. Keep in the fridge for 2-3 days and enjoy warm or cold.

Ingredients

For the Dough:

  • 240g thick coconut yoghurt
  • 280g self-raising flour, plus extra to dust
  • 1 tbsp olive oil
  • Pinch of salt

For the Pizza Toppings:

  • 100g berry jam
  • 1 banana, sliced
  • 8 strawberries, sliced (plus extra)
  • 60g dark chocolate, chopped into chunks
  • Vegan ice cream, or whipped coconut cream
  • 1 handful fresh blueberries
  • 2 tbsp chopped nuts or granola, optional

For the Caramel Sauce:

  • 60g (4 tbsp) runny smooth peanut butter
  • 1 tbsp maple syrup
  • 1 tbsp coconut oil, melted

Instructions

  1. Make the dough by stirring together the yoghurt, flour, olive oil and salt in a mixing bowl to a shaggy dough. Tip onto a lightly floured work surface and knead with your hands for 1-2 minutes to reach a smooth ball of dough. Cover with a tea towel and leave for 10 minutes.
  2. Preheat the Salter Rapid Cook 400 to Fresh Pizza and set the timer for 5 minutes. Make sure the pizza stone is inside the machine.* see notes for oven temperatures and times.
  3. Divide the dough into 2 pieces and roll each one into a circle on a piece of floured parchment paper, approximately 22-24cm in diameter.
  4. Spread the jam over the pizzas to a thin layer, leaving a border around the edge. Lay over the banana slices and strawberries.
  5. Once preheated, use the pizza paddle to transfer the pizzas to the Rapid Cook and bake each pizza for 4-5 minutes, until golden all over and the with puffy edges.
  6. Carefully remove from the Rapid Cook machine and sprinkle over the chocolate.
  7. Wait for a few minutes to allow the chocolate to melt (you can now spread it out or leave as melting chunks).
  8. Meanwhile, make the caramel sauce by whisking together the ingredients until smooth.
  9. To serve, add a scoop of ice cream, some fresh blueberries and granola and drizzle over the caramel sauce.
  10. Enjoy straight away. To serve at a later time, allow the pizzas to cool after step 6 and then enjoy cold later on or warm back up and serve as desired.

Notes

To cook in a regular oven, preheat to 210Fan/230ºC with a metal tray inside. Cook the pizzas on the parchment onto the hot tray for 10-15 minutes, until puffy and baked all the way through.
