Dark Chocolate Almond Granola Bark (Vegan No-Bake)

This no-bake, delicious and wholesome Dark Chocolate Almond Granola Bark is the perfect snack or dessert. It makes big chunks of granola covered in almond butter swirled dark chocolate that everyone will love.

I love anything with granola and for the back-to-school and back-to-work time of the year (aka September) I wanted to create a recipe that was effortless to make and prepare and will be great for on-the-go snacks, adding into lunchboxes or for snacks when you get home with a cup of tea. This granola bark is packed with wholesome ingredients that will make you feel great eating, while the dark chocolate and almond topping takes these to the next level. You can play around with the nuts here to suit what you have at home and also the flavour of the chocolate, too.

What ingredients do I need?

You can see the ingredients with weights in the recipe card and see my favourites and recommended products in the “shop the recipe” section.

For the bark:

  • Runny smooth almond butter: I love Pip & Nut almond butter because it’s so silky smooth and 100% nuts (or with added salt) so make sure it’s smooth and runny for best results. You can swap this for another nut or seed butter, with a slightly flavour change. It would be great with cashew or sunflower seed butter.
  • Maple syrup: for sticky sweetness to hold the bars together.
  • Melted coconut oil: this allows the bars to set more firmly once cool.
  • Vanilla extract: for flavour.
  • Rolled oats: these are the key to the granola bar and make sure they are gluten-free where needed.
  • Walnuts and pecans: or use a mix of other nuts like cashews, macadamia or hazelnuts.
  • Flaked almonds: these are great for texture.
  • Hulled hemp seeds: for added goodness.
  • Desiccated coconut: for texture and they add a lovely sweet nutty flavour.
  • Ground flaxseed: this adds omega goodness as well as binding the bars.
  • Cinnamon: for a cosy sweetness.
  • Salt: for flavour.

And for the topping:

  • Dark chocolate: you can use your favourite chocolate buttons, chips or bar here. I use the Divine 70% Dark chocolate which I love.
  • Coconut oil: to allow the chocolate to set more smoothly.
  • Runny smooth almond butter: as above, to swirl on top.

Is this gluten-free and nut-free?

This is easily gluten-free, as long as your oats are certified gluten-free. to make this but-free, swap the almond butter for sunflower seed butter and swap all of the nuts for a mix of sunflower and pumpkin seeds.

How do I make this?

You can make this bark in a few steps:

  • Combine all of the wet ingredients: until smooth.
  • Chop all of the nuts: into small chunks.
  • Combine the wet and dry ingredients: and stir to a sticky mix.
  • Press into a lined dish: and chill or freeze until set.
  • Cover with melted dark chocolate: and swirl on almond butter.
  • Allow to set again: and then slice or break apart.

How long will it last?

Once made, keep the bark in the fridge for up to 1 week in a sealed container. You can freeze it too, wrapped well, and allow to defrost or enjoy freezer cold for a crunch.

Ingredients

For the Bark:

  • 60g runny, smooth almond butter
  • 60ml maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 50g rolled oats
  • 70g walnuts/pecans mix, chopped small
  • 40g flaked almonds
  • 30g hulled hemp seeds
  • 25g desiccated coconut
  • 20g ground flaxseed
  • 1 tsp cinnamon
  • A pinch of salt

For the Topping:

  • 90g dark chocolate, chopped small
  • 1 tbsp coconut oil
  • 2 tbsp runny, smooth almond butter

Instructions

  1. Line a freezer-safe tray or plate with parchment paper.
  2. Into a large mixing bowl, add the almond butter, syrup, coconut oil and vanilla and whisk until smooth. Now pour in the rest of the granola bark ingredients and stir until sticky and combined.
  3. Pour the mixture onto the tray and press down firmly to make a compact layer.
  4. Chill in the freezer while you move on.
  5. Add the chocolate and coconut oil to a heatproof bowl and melt in the microwave or over a pan of simmering water until melted.
  6. Remove the pan from the freezer and pour over the chocolate, spreading almost to the edges. Spoon over the almond butter and make swirls.
  7. Return to the freezer for 1 hour, or until set firm.
  8. Slice into pieces and enjoy.
  9. Keep in the fridge or freezer for 1 week, in a sealed container.
