Peanut Butter Strawberry FroYo Bites (Vegan High-Protein)

These easy, vegan and high-protein Peanut Butter Strawberry FroYo Bites are the perfect summer snack. They are no-bake and made with 6 basic ingredients and take just 10 minutes to make.

Summer is officially on the way and when the sun comes out, all I want to make is summery recipes, like these frozen yoghurt bites which taste like ice cream, chocolate and PB&J in every bite. They are made with good-for-you ingredients and also have gut health benefits, too, as we are using fermented yoghurt. The rest of the recipe comes together in one bowl, sets in the freezer and then dip these clusters into dark chocolate for the best little snack or dessert this summertime.

I made these in collaboration with Michelle of @run2food on Instagram and have tweaked her recipe, as she uses peanut butter protein powder, which isn’t as common. I also added strawberries instead of raspberries and added the coconut oil to the melting chocolate so that they are shinier and set more quickly.

What ingredients do I need?

You can see the ingredients with weights in the recipe card and you can see my favourites in the “shop the recipe” section below.

Here are the ingredients:

  • Thick coconut yoghurt: use a good quality yoghurt like Cocos which only contains a few ingredients and is naturally full of live bacteria and is therefore great for the gut.
  • Runny smooth peanut butter: this adds the peanut butter flavour into every bite. To make these peanut-free use almond or cashew butter or swap for tahini or sunflower seed butter to make these nut-free.
  • Vanilla protein powder: I use the Form vanilla protein powder which is my favourite here.
  • Strawberries: slice these and add on top of the yoghurt mix and allow to set. You can try these with other fruits like raspberries, blueberries or apple slices.
  • Dark chocolate: you can use your favourite bar, chips or buttons of dairy-free chocolate. I like dark but you can use dairy-free milk chocolate, too.
  • Coconut oil: add this to chocolate as it melts so that the chocolate sets shinier, more quickly and it’s then less likely to crack.
  • Freeze-dried strawberries: these are optional, but I love sprinkling them on top and a little goes a long way.

Are these gluten-free and nut-free?

These are gluten-free and to make the bites nut-free, swap the peanut butter for tahini or sunflower seed butter and check your chocolate and yoghurt for nuts.

How do I make them?

These are easy to make in a few steps:

  • Mix together the yoghurt, peanut butter and protein powder: until smooth.
  • Spoon onto a tray: in rounds.
  • Top with sliced strawberries: and freezer for 1 hour.
  • Melt the chocolate and coconut oil: in a small bowl.
  • Dip each FroYo bite in the chocolate: flipping over to cover all the sides.
  • Place on a tray and sprinkle with freeze-dried strawberries: and they’ll set in a minute or so.

How long will they last?

Once made, keep these in the freezer for 1 month, wrapped well for frozen bites, or for softer yoghurt bites, keep them in the fridge for 3-5 days, in a sealed container.

These easy, vegan and high-protein Peanut Butter Strawberry FroYo Bites are the perfect summer snack. They are no-bake and made with 6 basic ingredients and take just 10 minutes to make.

Ingredients

  • 240g thick coconut yoghurt
  • 2 tbsp runny, smooth peanut butter
  • 40g vegan vanilla protein powder
  • 3-4 large strawberries, sliced
  • 120g dark chocolate, chopped small
  • 1 tbsp coconut oil
  • 2 tbsp freeze-dried strawberries, optional

Instructions

  1. Line a freezer-safe tray with parchment paper.
  2. In a small mixing bowl, whisk the yoghurt, peanut butter and protein powder until thick and smooth.
  3. Divide the mix into 6 and scoop onto the tray, making 6 rounds of yoghurt. Top with some strawberry slices.
  4. Transfer to the freezer for 1 hour, until set and firm to touch.
  5. Add the chocolate and coconut oil to a heatproof bowl and microwave until melted (or use a pan of simmering water) and glossy.
  6. Use a palette knife or spatula to remove the yoghurt clusters from the tray and thin dip each cluster, one by one, into the chocolate, covering all sides, allowing the excess to drip off. Place back on the tray and decorate with freeze-dried strawberries straight away.
  7. The chocolate will set straight away, or place in the freezer for 5 minutes.
  8. Enjoy straight away or keep them in the freezer for 1 month, wrapped well. You can enjoy these at room temperature with a spoon, as the yoghurt will soften, too, or straight from the freezer.
