Matcha White Chocolate Protein Oat Bars (Vegan No-Bake)

These no-bake Matcha White Chocolate Protein Oat Bars have a rich and delicious matcha oat base made with whole-food vegan and gluten-free ingredients topped with dairy-free white chocolate for a delicious snack.

I love making bars, slices and snacks in general, and often try to include protein of some kind to keep me fuller for longer. These bars are the best snack as they have protein, fibre, natural sugars and a caffeine boost from the matcha, making them a really superfood bar. They are easy to make as they require no baking and come together in one bowl with 5-10 minutes of effort. Chill the bars in the fridge before slicing and enjoying all week long. They are a great recipe to meal prep at the weekends or to keep in the fridge/freezer for when you fancy something sweet.

What ingredients do I need?

You can see the ingredients with weights in the recipe card and see my favourite and recommended products in the “shop the recipe” section.

For the oaty base:

  • Oats: rolled oats are best for texture and make sure they are GF where needed.
  • Vanilla protein powder: I use Form performance vanilla protein as the ingredients, tastes and quality are the best.
  • Matcha green tea powder: I love matcha powder and use Matchaeologist which I have found to be the best flavour, colour and overall deliciousness. I have a link and discount code here to try (nourishinglove15 is the code).
  • Smooth cashew butter: I love the taste of cashew butter, which is naturally sweet, tastes like cookies and is so luxurious. You can also use sunflower seed butter or tahini for nut-free options.
  • Maple syrup: for sweetness. You can also use agave syrup.
  • Coconut oil: melted and cooled, to allow the bars to set.
  • Plant-based milk: add 1-2 tbsp as needed to make a fudgy, sticky mix. You can use any dairy-free milk like oat, almond, soya or coconut.

And for the chocolate top:

  • Dairy-free white chocolate: use your favourite dairy-free white chocolate (refined sugar free where needed) to melt with a little cashew butter to make a delicious top. If you don’t have white chocolate, dairy-free milk or dark chocolate will also work.
  • Runny cashew butter: as above.
  • Extra matcha powder: to dust on top.

Are these gluten-free and nut-free?

These are naturally gluten-free, as long as your oats are GF certified. To make them nut-free, swap the cashew butter for sunflower seed butter or tahini.

How do I make them?

These bars come together in a few steps:

  • Stir together the dry ingredients: to combine.
  • Pour in the wet ingredients: and stir to a sticky mix.
  • Press into a lined square tin: and chill in the fridge for 30 minutes.
  • Melt the white chocolate: with some cashew butter to make it fudgy.
  • Pour the chocolate over the base: and spread out.
  • Dust with extra matcha: and return to the fridge for 30 minutes.
  • Remove from the fridge and slice into bars: and enjoy.

How long will they last?

These bars will keep for 1 week in the fridge in a sealed container or for 1 month in the freezer, wrapped well. Allow the bars to defrost before eating.

These no-bake Matcha White Chocolate Protein Oat Bars have a rich and delicious matcha oat base made with whole-food vegan and gluten-free ingredients topped with dairy-free white chocolate for a delicious snack.

Ingredients

For the Bars:

  • 150g rolled oats
  • 50g vanilla protein powder
  • 2 tbsp matcha powder
  • 60g smooth cashew butter or tahini
  • 60ml maple syrup
  • 2 tbsp melted and cooled coconut oil
  • 1-2 tbsp plant-based milk

For the Topping:

  • 100g dairy-free white chocolate chips
  • 1 tbsp cashew butter or tahini
  • Extra matcha powder

Instructions

  1. Line a 6-inch/15-cm square tin with parchment paper.
  2. In a mixing bowl, stir together the oats, protein and matcha powder. Pour in the cashew butter/tahini, syrup, coconut oil and 1 tbsp plant-based milk.
  3. Stir to a thick and even mixture, adding 1 tbsp more milk, if needed.
  4. Press into the tin to make a compact base and chill in the fridge for 30 minutes.
  5. Add the white chocolate to a heatproof bowl with the cashew butter/tahini and warm in the microwave or over a pan of simmering water until melted and glossy.
  6. Pour the chocolate over the matcha bars and spread out. Dust with matcha powder and return to the fridge for 30 minutes until the chocolate has set.
  7. Remove the bars from the tin and carefully slice into 8 bars.
  8. Enjoy straight away or keep in the fridge in a sealed container for 1 week or in the freezer for 1 month (allow to defrost before eating).
