This chunky and crispy Chocolate Peanut Protein Granola is packed with high fibre and high protein ingredients and comes together in one bowl. It’s naturally plant-based and gluten-free and tastes amazing.
I am back with another homemade granola recipe, because once you’ve made your own cereal there is no going back. This chocolatey number is also high in protein, with added protein which is such a good idea if you are looking to add more protein to your morning breakfast (or as a snack). It makes the biggest, chunky clusters which are seriously addictive. As well as the cacao powder and chocolate protein powder inside the granola, it’s also got a top layer of melted dark chocolate which makes for the most indulgent yet wholesome recipe.

What ingredients do I need?
You can see the ingredients with weights in the recipe card below and see my favourite and recommend products in the “shop the recipe section.
For the granola:
Rolled oats: as the base for the granola. Make sure they are GF where needed.
Mixed nuts: I’ve used peanuts, almonds and cashews but feel free to ad din walnuts, pecans, hazelnuts, macadamia nuts etc. To make this nut-free, use more seeds as below.
Mixed seeds: like pumpkin, whole hemp and sunflower seeds.
Chocolate protein powder: I use the Form super-blend chocolate peanut protein powder but the other chocolatey proteins would also be great. You can use other proteins, too, and this one adds chocolatey flavour and richness. If you don’t want to use protein powder, add more cacao powder.
Cacao powder: to make it even more chocolatey.
Ground flaxseed: to add fibre.
Salt: for flavour.
Peanut butter: this adds a “buttery” element to the recipe and you can also try this with almond or cashew butter. To make it nut-free use tahini or sunflower seed butter.
Maple syrup: to sweeten the mix and to make it crispy and form big clusters.
Olive oil: to add the “buttery” richness to the granola.
Dark chocolate: use your favourite dairy-free milk or dark chocolate here. I love the Raw Halo giant buttons which are made with natural, refined sugar free ingredients.

Is this gluten-free and nut-free?
This is naturally gluten-free as long as your oats are certified gluten0free. to make it but-free, swap the nuts for more seeds and swap the peanut butter for tahini or sunflower seed butter.
How do I make this?
This is ready in a few steps:
Combine all the dry ingredients: and stir well.
Warm together the peanut butter, maple syrup and olive oilin a pan: until combined.
Pour the wet mix into the bowl: and stir well.
Press the granola firmly into a lined tray: and make a compact layer.
Bake for 25 minutes: turning around every 10 minutes.
Sprinkle over the chocolate chips while it’s still hot: and allow to melt.
Spread out the chocolate: and then allow the mix to cool fully.
Break apart the granola: and enjoy.

How long will this last?
Keep the granola in a sealed container for 2 weeks.
Chocolate Peanut Protein Granola (Vegan Gluten-Free)
Yield: 1 large jar

Cook Time: 25 minutes

Ingredients
150g rolled oats
120g mixed nuts, chopped (peanuts, almonds and cashews)
70g mixed seeds (whole flaxseed, sunflower and pumpkin seeds)
30g chocolate (peanut) protein powder
1 tbsp cacao powder
2 tbsp ground flaxseed
A pinch of salt
80g runny smooth peanut butter
60ml maple syrup
60ml olive oil
60g dark chocolate chips
Instructions
Preheat the oven to 140Fan/160ºC and line a large baking tray with parchment paper.
Into a large mixing bowl, add the oats, chopped nuts, seeds, protein powder, cacao powder, ground flaxseed and salt. Stir to combine.
Pour the peanut butter, maple syrup and olive oil to a small saucepan and allow to warm through and stir to mix together.
Pour the peanut butter mix into the oats and stir really well so everything is sticky.
Tip the granola onto the tray and press down to make a compact layer.
Bake for 25 minutes, turning the tray 180º every 10 minutes. It will be crispy at the edges and firm to tough.
Immediately from the oven, sprinkle over the chocolate chips and allow them to melt for 5-10 minutes. Now you can spread the chocolate out, or leave as chips.
Allow the granola to cool fully before breaking apart and keeping in a sealed jar for 1-2 weeks.
