What ingredients do I need?

You can see the ingredients with weights in the recipe card below and see my favourite and recommended products in the recipe card below.

For the filler:

  • Beans or chickpeas: I use cannellini beans or chickpeas here, both from Bold Bean Co as they are my favourite as they are softer and plumper. You want to smash them slightly as you stir it together, so it’s smooth with some bite.
  • Red onion: to add some flavour and crunch.
  • Thick dairy-free yoghurt: instead of mayonnaise, the creaminess comes from unsweetened yogurt, which is so good. Make sure it’s one you like the flavour of. Then, the tang of the mayo comes from the lemon below.
  • Lemon: the zest and juice add so much flavour.
  • Mango chutney: this adds fruitiness which is really good here but if you don’t have any, that is fine, this filling is still delicious without it.
  • Mild curry powder: this adds all of the main flavour and gives the true “coronation” flavour.
  • Raisins: these add some chewy texture and a pop of sweetness.
  • Flaked almonds: to add some crunch and texture. You can also leave these out.
  • Salt and pepper: to season.

Is this gluten-free and nut-free?

Yes this is gluten-free as long as whatever you serve it with is GF. To make it nut-free, leave the almonds out.

How do I make this?

This is simple to make:

  • Add the ingredients to a bowl: and stir and smashing lightly.
  • Keep in the fridge or use straight away: however you like.

In what ways can I enjoy it?

This is great:

  • Between sourdough (toasted or not) as a sandwich with lettuce
  • Spread onto homemade Superseed Buckwheat Bread
  • In a toasted panini
  • Inside a tortilla warp
  • With a kale or lettuce salad
  • Inside a jacket potato or roasted sweet potato
  • From the tub as a snack
  • With crackers

How long will it last?

This will keep for 2-3 days in the fridge in a sealed container.
