I love this sandwich filler as it takes 5 minutes and is packed with flavour while being so good for. For the filler:
Beans or chickpeas: I use cannellini beans or chickpeas here, both from Bold Bean Co as they are my favourite as they are softer and plumper. You want to smash them slightly as you stir it together, so it’s smooth with some bite.
Red onion: to add some flavour and crunch.
Thick dairy-free yoghurt: instead of mayonnaise, the creaminess comes from unsweetened yogurt, which is so good. Make sure it’s one you like the flavour of. Then, the tang of the mayo comes from the lemon below.
Lemon: the zest and juice add so much flavour.
Mango chutney: this adds fruitiness which is really good here but if you don’t have any, that is fine, this filling is still delicious without it.
Mild curry powder: this adds all of the main flavour and gives the true “coronation” flavour.
Raisins: these add some chewy texture and a pop of sweetness.
Flaked almonds: to add some crunch and texture. You can also leave these out.

Ingredients
For the Filling:
1 tin cannellini beans or chickpeas (drained weight 240g)
½ red onion, small dice
30g thick unsweetened dairy-free yoghurt
½ lemon, juice and zest
1 tbsp mango chutney
1 tsp mild curry powder
35g raisins
2 tbsp flaked almonds
Salt and pepper
To Serve:
Sliced sourdough bread, wraps or pitta breads
Salad leaves
Fresh vegetables, chopped
Instructions
For the filling, add all of the ingredients to a shallow bowl and season with salt and pepper. Stir really well, slightly smashing the beans apart as you do, to make a chunky paste.
Keep the sandwich filler in the fridge in a sealed container for 2-3 days until ready to use.
Serve as a sandwich between two slices of sourdough bread, inside a wrap or a pitta bread, with some salad leaves and fresh vegetables.
