What a way to start the day. Creamy coconut infused thick overnight oats with gooey chunks of mango topped with fresh fruits, sweet syrup and crunchy buckwheat.
I do not enjoy overnight oats often enough and after making this new recipe recently, I most definitely will be making them more. My go-to breakfasts are usually smoothie bowls or baked oats at the moment, although I am really enjoying oats in this way.
The magic of soaking the oats in creamy milk overnight with some chia seeds results in a really thick and soft texture oat mixture that feels so wholesome and satisfying. I like to add chia seeds to my oats for added boost of nutrients and healthy fats as well as thickening the mixture and adding a great texture. To make the Mango Coconut Overnight Oats truly tropical, I’ve used coconut milk, desiccated coconut and chunks of mango. The flavours are simple and coconutty with vibrant and fruity mango. I like to add frozen mango chunks to the mix the night before as they de-frost overnight although you can use fresh mango.
Simply stir together all the ingredients, pop it in the fridge and away you go in the morning. You can simply pick up the jar as you head out in the morning to enjoy en route or at your desk, adding the toppings into the jar or pour into a bowl for a slower and nourishing start to the day. My favourite toppings for this Mango Coconut Overnight Oats are creamy coconut yoghurt, fresh fruits like kiwi, persimmon and cherries as well as some chewy dried fruits and crunchy buckwheat or granola – plus a drizzle of syrup!
These Mango Coconut Overnight Oats take only 5 minutes to make the night before and just top with your favourite foods in the morning and you’ve got a balanced, delicious and healthy breakfast pot that’s cheap to make and delivers on flavour. The recipe is naturally vegan, gluten-free (make sure the oats are GF certified if you are coeliac) and packed with fibre, protein and good-for-you fats.

Hey Amy. This looks so easy to do especially for me being such a newbie at cooking. I am so bored having the same breakfast every morning. Cereal or granola-so your Mango overnight oats look divine. Do you need to add chia seeds to the mixture socks I don’t have chia seeds? Aww my favourite plant milk Coconut milk and I adore Mango.
Getting vegan products from shops cost so much money and I was Just wondering if you could recommend any good shops or online shops where you can buy free from foods/vegan from. I so wish we were nearer to London for Sophs lovely Wholefoods and Planet Organic. Super photography and Sure I will tag if I make it. I might actually make this over the weekend.
