Thick, chewy and hearty protein muffins that are packed with delicious chocolate flavour and sweetened with juicy pears. These make great pre or post-workout snacks or as part of a vegan and gluten-free breakfast. They are quick to make and come together in one bowl.
These Pear and Chocolate Protein Breakfast Muffins came together one cold-but-supposed-to-be-summer morning when I craved something warm for breakfast. I was set on a chocolate and pear combination and thought I was going down the baked oats route when I thought how fun it would be to make them into muffins instead. Cake for breakfast mid-week felt like such an extravagance and a treat but really, these are exactly what you’d put in your oats.
In that sense, these muffins aren’t light, fluffy and cakey like my Peanut Butter and Blueberry Muffins just to burst that bubble. Nevertheless, these muffins are totally delicious and crave-able but do enjoy them for breakfast. That said, they are great spread thickly with nut butter and eaten with a cup of tea in the afternoon. As they are quite hearty, they also travel well and won’t crumble in your bag too much if you are enjoying them on the go.
The only sweetness comes from the grated pear which has so much juicy goodness. Keep the skin on to keep in all the fibre and save a little bit for some decoration on top, too. Stir in the oats, chocolate protein powder, ground flaxseed, chia seeds, baking powder, more cacao powder for that real chocolate flavour and some coconut flour for a great chewy and moist texture. I love using coconut flour, but it does have a very unusual texture, so you won’t be able to change this for regular flour in the same quantities.
These Pear and Chocolate Protein Breakfast Muffins really are so easy, and they smell delicious as they bake. The key is to allow them to cool slightly before removing them from the muffin tin or silicone cupcake liners (that I used) as they are delicate straight out of the oven. Serve them with yoghurt and chocolate sauce for a delicious breakfast or snack, enjoy with a shake post-workout or with a cup of tea and scoop of ice cream as a dessert.

I so want to know where you can buy silicone cupcake cases from and are they dishwasher safe though?
