A rich and creamy breakfast bowl packed with fresh fruit, yoghurt, granola and a drizzle of tahini. This breakfast bowl can be whipped up in 5 minutes and enjoyed as part of a delicious morning routine before you head out the door.

This Tropical Vanilla Yoghurt Power Bowl is hardly a recipe, in fact I more want to share it with you on here to showcase how versatile, simple, nutritious and delicious vegan food is when you know what to do with it. I also want to overhaul the typical yoghurt or granola or fruit bowl that a lot of people enjoy for breakfast and show you a simple way that you can have all of them in one for a better balance.

My meals tend to be balanced, I’ll have a mixture of carbohydrates, proteins, fruit and/or vegetables, healthy fats and I also like to play around with textures. This bowl has it all: creamy smooth cooling yoghurt, fresh, zingy sometimes tangy but sweet fruit and crunchy, chewy granola with a luxurious drizzle of tahini.

This bowl is vegan, gluten-free (check your granola), packed with protein and is free of added sugars (again, check your yoghurt) and is such a happy bowl to look at! The key to this bowl is the presentation if you want the wow factor, but similarly, you can chop all the fruit into similar sized pieces, stir it all together, top with the granola and the tahini and it will taste just as delicious.

The flavours really do need no introduction: when you use the freshest fruits you can find, the flavours sing! I love the contrast of the sweet yoghurt with the vibrant tropical fruits but remember to get creative with the fruits you choose as any would work here.

A note on protein: I love adding protein powders to baking, breakfast bowls and smoothie bowls for the amazing flavour and protein boost but not everyone does. Feel free to leave it out but the yoghurt won’t thicken up and the vanilla flavour will not be as strong.

This really is a breakfast bowl and snack bowl that I have probably every day in one shape or form or at some point throughout the day… I love it in the evenings as a dessert bowl, too. I hope it will fit seamlessly into your lifestyle – remember you can pack it up in a jar or Tupperware and enjoy on the go! It’s creamy, packed with texture, colour and flavour and comes together in only 5 minutes. Breakfast has never seemed more luxurious for such minimal effort.

Ingredients

  • 150g plain or vanilla yoghurt
  • 1 scoop vanilla protein powder*
  • ½ papaya, sliced
  • ½ passionfruit, seeds scooped
  • 1 flat peach, sliced
  • 1 kiwi, sliced
  • 2 cherries
  • A mixture of berries (strawberries, blueberries, raspberries)
  • 40g granola
  • 1-2 tbsp tahini

Directions


1. Stir together the yoghurt and protein powder until thick and creamy. Pour into a bowl.
2. Arrange the fruit on top of the yoghurt, pour over the granola and drizzle with tahini.
