Roasted Cauliflower Dahl

A rich and warming tomato and coconut based dahl with golden roasted cauliflower – this is a deliciously simple and healthy vegan, gluten-free and wholesome lunch or dinner for all the family.

The season for warming food is most definitely here and all I am craving is lots of warming dishes. There have been so many pots of stews, curries, dahls and roasted vegetables in the kitchen recently that I had to share this recipe. I recently created this recipe for Turmeric Co who make and sell the most amazingly fresh and zingy turmeric shots. But, I wasn’t content with just sharing it on my social media, I wanted to make sure we can all access the recipe for many months to come. So, here it is. I have added in alterations to the recipe if you don’t have the ginger turmeric juice shot, simply use ground turmeric and some fresh ginger.

The base of the dahl is onion and garlic with red pepper, lightly flavoured with mild curry powder and the ginger turmeric. Add in the red lentils which turn gorgeously soft and comforting after a 20-minute simmer. I love to use half coconut milk and half chopped tomatoes for my curries and dahls to make them creamy but not too heavy.

The extra star of this Roasted Cauliflower Dahl is the roasted cauliflower. Toss the cauliflower florets in some mild curry powder for a golden colour and rich flavour and roast until tender and crisp. If you haven’t tried roasted cauliflower before, then you are in for a treat. Rich, wholesome, earthy and slightly sweet.

Serve this Roasted Cauliflower Dahl with some creamy cooling coconut yoghurt, fresh herbs and pumpkin seeds as well as some rice, flatbreads or naan breads for example. I have my quick and fail-proof Easy Fluffy Flatbreads which work wonders here.

A rich and warming tomato and coconut based dahl with golden roasted cauliflower – this is a deliciously simple and healthy vegan, gluten-free and wholesome lunch or dinner for all the family.

Ingredients

  • 1 head cauliflower, broken into florets
  • 1 tsp mild curry powder
  • Olive oil
  • Salt and black pepper
  • 1 red onion, small dice
  • 4 garlic cloves, peeled and sliced
  • 1 red pepper, small dice
  • 1 tbsp mild curry powder
  • 150g red split lentils
  • 1 Ginger Turmeric Shot (or 1 tsp ground turmeric and 1-inch piece fresh ginger, peeled and grated)
  • 1 tin (400g) chopped tomatoes
  • 1 tin (400ml) coconut milk
  • 1 tbsp miso paste
  • To serve: cooked rice, plant-based yoghurt, fresh coriander, pumpkin seeds

Directions


1. Preheat the oven to 160Fan/180*C. Arrange the cauliflower florets on a tray and cover with the 1 tsp mild curry powder and a generous drizzle of olive oil. Season with salt and black pepper and roast for 25-30 minutes until golden and tender.
2. Meanwhile, heat a drizzle of olive oil in a large saucepan and fry off the onion and garlic for 5 minutes. Add the red pepper and fry for another 5 minutes until tender.
3. Add the 1 tbsp curry powder and allow to cook for 1 minute until fragrant before stirring in the red lentils, Ginger Turmeric Shot, chopped tomatoes, coconut milk and miso paste. Bring to the boil and allow to simmer for 20 minutes, stirring occasionally. Season with salt and black pepper. The dahl will be creamy, and the red lentils will be soft.
4. Serve the dahl with rice topped with the golden roasted cauliflower. Pour over some plant-based yoghurt, some chopped fresh coriander and some pumpkin seeds. Serve with flatbreads, rice and/or naan breads.
