Rich, fudgy and indulgent chocolate truffles with minimal fuss and time needed and maximum indulgence. These truffles are naturally vegan and packed with a secret ingredient.

This time of year (currently it’s February 2020) we tend to talk and think about Valentine’s Day. Whether or not you are in a relationship, the shops, social media, adverts… they are all about love. And why not? Instead of love, I’m focusing on self-love and showing yourself a little TLC. Perhaps that’s going for a walk, having a bath with a candle, snuggling up to a furry friend, reading a book or spending time in the kitchen. And eating chocolate.

Chocolate is always a good idea in my eyes, so these Rich Vegan Chocolate Truffles are the perfect way to treat yourself, friends and loved ones at any time of year. They are naturally vegan, dairy-free, soy-free and gluten-free and refined sugar-free, too depending on the chocolate you use.

You only need 7 key ingredients to make these Rich Vegan Chocolate Truffles – one of which may surprise you. Don’t tell anyone that I’ve sneaked some avocado in here. The key to the creamiest texture that holds itself together and has the most tender bite is actually the fatty fruit! Blend until smooth, add in some cacao powder, syrup, salt and then add in some melted chocolate and coconut oil. The mixture will thicken before your eyes and it takes a lot of will power to not eat the entire bowl of the blender!

Let the truffle mix rest in the fridge to thicken even more and then roll into balls and roll in some cacao powder. I’m quite heavy-handed with the cacao – no-one complained. As the truffles sit in the fridge, they will absorb the cacao, so give them an extra dusting before serving if you’re not serving them straight away. Play around with the flavours depending on the chocolate bar you use and add in some ground ginger or cinnamon to the cacao coating, too.

I first made these Rich Vegan Chocolate Truffles with a dark chocolate orange and ginger bar from Divine which was amazing but use original chocolate or any other flavour you like. They’ll still be rich, creamy, smooth and indulgent while being secretly a bit healthy and good for you. They’re naturally gluten-free, dairy-free and soy-free and come together in 10 minutes!

Rich, fudgy and indulgent chocolate truffles with minimal fuss and time needed and maximum indulgence. These truffles are naturally vegan and packed with a secret ingredient.

Ingredients

  • 80 dark chocolate
  • 20g coconut oil
  • 1 ripe avocado
  • 2 tbsp cacao powder
  • 2 tbsp syrup
  • Pinch of salt
  • 1 tbsp cacao powder, for rolling
  • ¼ tsp ground ginger or cinnamon, for rolling (optional)

Directions


1. Melt the chocolate and coconut oil together until smooth.
2. Add the avocado flesh, cacao powder, syrup and a pinch of salt to a food processor and blend until smooth. Pour in the melted chocolate mixture and blend again until silky and thick, scrape down the sides as necessary.
3. Transfer the mix to a dish and place in the fridge for 1-2 hours until firm.
4. Using 1 small tablespoon measure per truffle, roll the mixture into 10 balls.
5. Place 1 tbsp cacao powder onto a plate (and the ginger, if using) and roll the balls in the cacao powder to coat them. Store the truffles in the fridge for up to 3 days.

    Looks divine Amy and happy Valentines! Such a relatable post and my valentines were my lovely parents and my dog 🐶. However all of my friends I wished happy Valentines too. Splendid photography and I so want to make your truffles they look epic! Can’t believe there is avocado 🥑 in your truffles. Are they easy for s beginner cook like myself?
