Chocolate Peanut Butter Gummy Bear Rocky Roads (Vegan GF)

Rich and chocolatey peanut butter rocky road bars packed with rice crispies, nuts and mini marshmallows topped with pretzels and gummy bears. These bars are easy to make in 10 minutes and make a delicious festive or year-round snack.

I love any excuse to make my sweet recipes slightly festive, and these Chocolate Peanut Butter Gummy Bear Rocky RoadsΒ are no exception. I had some gummy bears lying around (thanks to these ones – use code AMY20 for 20* off)* and thought about a few recipes to make with them and then I thought more about the actual gummy bears. I used to love them as a child, so having them again takes me straight back to my childhood and having after-school sweets in the car on the way home or the giant pick β€˜n’ mix you’d have at the cinema. And what else reminds me of childhood?Β Rocky road, for sure! It’s basically a good reason to add lots of yummy things to melted chocolate, let it set and then eat it as a bar – so you get sweets and chocolate in one!

These Chocolate Peanut Butter Gummy Bear Rocky Roads have a few delicious things added to them, but they are quite flexible depending on what you have to hand:

  • Chocolate: key to rocky roads. I like dark chocolate, especially as the rest of the ingredients are quite sweet. This balances out the sweetness well, but you can use any chocolate.
  • Peanut butter: this adds such a wonderful richness and depth of flavour and keeps these bars soft enough to eat without breaking your teeth but yet they hold their shape. I love the flavour of the peanuts here, but you can use another nut butter or seed butter in its place.
  • Rice crispies: again, these remind me of childhood rice crispy cakes! You could use another cereal here like cornflakes or puffed spelt.
  • Mini marshmallows: or use larger marshmallows, chopped in half. I love the sweet chewiness and softness these add to the rocky road bars.
  • Cashews: these add crunch and some healthy fats, too. You could use any nut, or seeds to keep them nut-free.
  • A pinch of salt: this goes a long way with sweet bakes (or raw bakes like this one) and it contrasts the sweetness so well.

Simply melt together the chocolate and peanut butter, stir in the other ingredients and then pour into a lined dish. Now it is time to decorate with the pretzels (GF if needed and star-shaped for the festive season) and gummy bears! I also added on some sprinkles for the fun of it!

Now all you have to do is wait for the bars to set in the fridge for 1-2 hours and then slice into bars. It’s often easier and more fun, to slice them into irregular shapes, or you can go for normal bars or squares.

These no-bake, vegan, gluten-free and delicious chocolate snacks are so easy to make in a few steps. They are fun to make with little ones and are a great dessert or afternoon treat any time of year, especially in winter. Switch up the crunchy ingredients for any combination of flavours.

Ingredients

  • 250g dark chocolate, broken up
  • 100g peanut butter
  • 50g rice crispies
  • 30g mini marshmallows
  • 50g cashews, broken up
  • A pinch of salt
  • 10 pretzels
  • 10-12 gummy bears
  • sprinkles, optional

Directions

  1. Line an 8-inch square dish with parchment paper.
  2. Add the chocolate and peanut butter to a saucepan and slowly heat until the chocolate melts and it is creamy.
  3. Pour into a large mixing bowl with the rice crispies, mini marshmallows, cashews and a pinch of salt. Stir to combine.
  4. Pour into the lined dish, smooth over the top and press on the pretzels, gummy bears and sprinkles, if using. Set in the fridge for 1-2 hours.
  5. Using a sharp knife, slice into pieces. Store in an airtight container for up to 1 week.

Just couple of questions for you: Which mini marshmallows brand food you like to use, also do you use the normal rice Crispie Kellogg’s and of course I would swap the peanut butter.
