What is not to love about pancakes? When they are light, fluffy and airy they are the best thing to have for breakfast or brunch. While it may not be an everyday thing, these pancakes are quick and easy enough to indeed be an everyday thing. Just maybe play around with the toppings to keep it interesting. Especially as it’s pancake day coming up in the UK right now (currently February 2020) so you don’t want to get sick of them before then – if that is even possible?
Like a lot of my favourite pancake recipes, simply add all the recipes to a blender, leave it to rest and then fry off in batches. I like to use oats as the base of the mixture as it means they are gluten-free while adding a boost of healthy fibre and protein, too. I also add in some vanilla protein powder as it makes them so fluffy! If you don’t want to use protein powders, you can add some more oats or use less liquid.
Another addition to these Blueberry Vanilla Protein Pancakes is the blueberries. Pop them into the pancakes as they cook, flip over and allow them to turn all juicy and soft – when you eat the pancakes they practically explode in your mouth! You could also use raspberries or chopped strawberries, too, for a change.
These Blueberry Vanilla Protein Pancakes are very easy to make and fail-proof to cook. You’ll only need 7 ingredients and top them with anything you like. I’ve chosen some more berries, coconut yoghurt, syrup and nut butter but play around. They are light and fluffy, hearty and wholesome while being fruity and fresh.

Amazing pancake 🥞 recipe Amy and perfect timing before pancake day. Every year I so want to make my own pancakes but I never seem to have the time. Lol 😂 I am a beginner cook can I make them in advance amd store them? Aww my favourite pancake toppings berries and syrup splendid photography as always! Saved to my WordPress collection for sure.
