Chewy, chunky and moist cake-like blondies studded with melting chocolate chunks and lots of desiccated coconut. These little squares are naturally gluten-free, vegan and easy to whip up in 30 minutes with only 9 ingredients.
These Chocolate Chunk Coconut Blondies are the second bake I made for when my coeliac friend visited me, and I had remembered too late that she was not a fan of bananas. So, I was a little worried my brand-new Chocolate Swirl Banana Bread wouldn’t go down too well. Despite her dislike for bananas, it is safe to say, she loved both of these bakes.
If you’re not sure what a blondie is, it is basically a brownie without the cacao powder in a sense. It is a cake-like tray-bake that’s slightly moist and fluffy, airy and perfect with a cup of tea.
These Chocolate Chunk Coconut Blondies are naturally gluten-free as I used a GF flour blend, but you can substitute this for another flour like plain, wholemeal or spelt flour. The bites also use coconut flour which cannot be swapped for another flour as coconut flour behaves very differently! You could try rice or almond flour, but I haven’t tried this myself.
The second element of coconut is the desiccated coconut which adds great texture without being overpowering in flavour. A little raising agent, chia or flaxseeds, some coconut sugar, nut butter and milk all bring these Chocolate Chunk Coconut Blondies together, before stirring in the chocolate chunks! This bake really is an easy one-bowl recipe that comes together in 5 minutes. You want to choose a more subtle nut butter like cashew or almond, but I loved it with hazelnut butter, too. You could use peanut butter, but the flavour would be stronger.
Bake these Chocolate Chunk Coconut Blondies until golden and firm before allowing them to cool slightly and serving up. They are great warm with melting chocolate but also great served cold with cups of tea or hot chocolate. You can even heat up slices to enjoy warm later on. Or, serve them as a dessert with custard or ice cream as they make an easy and healthy dessert option.
