Chocolate Covered Banana Pops (Vegan GF)

3-ingredient banana ice lollies coated in lots of dark chocolate and finished with a chewy and crunchy coating of dried fruits, nuts and seeds. These simple summery snacks are naturally vegan and gluten-free and require minimal effort.

I’m back with another really easy recipe – I don’t even know if you can call it that! But with the sunshine making a temporary appearance here in the UK, it is about time that I posted these delicious summer treats. They are great for a snack in the sun or for dessert. Plus, they are great to make with little ones and are highly versatile depending on your favourite chocolate and the dried fruits/nuts/seeds you have to hand.

While I did buy an ice cream lolly mould recently, I am yet to use it and have chickened out once again and make these much easier pops instead. You don’t need any fancy equipment or ingredients; just some wooden lolly sticks and a freezer. The bananas turn wonderfully like ice cream in the freezer and when coated with a crunchy chocolate shell and deliciously chewy and crunchy snacks, you’re guaranteed a delicious mouthful in every bite.

Here’s what we need:

  • Bananas: slice these in half to form two ‘pops’ and insert a wooden lolly stick or skewer before popping them in the freezer for a little while.
  • Chocolate: I like dark chocolate (it is usually vegan-friendly) but you can use your favourite flavour or variety here. The trick for an even coating is to fill a small jar – about the height of your banana halves – with the melted chocolate and simply dip them into the jar to cover it all evenly. The chocolate hardens quite quickly!
  • Dried fruits/nuts/seeds: use whatever you have at home and your favourite ones. Chop them small so they stick to the chocolate more evenly.

And that’s all there is to these Chocolate Covered Banana Pops! They are easy to make, family-friendly and such a crowd-pleaser. Just don’t leave them lying around as they will start to melt, and frozen banana turns very soft as it de-frosts!

Ingredients

  • 2 bananas, halved
  • 120g dark chocolate
  • 30g dried fruit, nuts and seeds, chopped

Directions


1. Insert a wooden lolly stick into each banana half and place in the freezer for 1-2 hours until firm. Chop the snacks to make them smaller.
2. Melt the chocolate and pour into a thin, tall glass (about the same height as the banana halves).
3. Dip each banana lolly into the chocolate, allowing most of the excess to drip off and place onto baking parchment. Repeat to make all 4 lollies. Drizzle with more chocolate and sprinkle over the chopped snacks. Best eaten straight away or from the freezer (allow to rest for 5-10 minutes to soften).
