I have a thing for blended oat jars, as seen here and here. They are just so creamy and combine my love for smoothie/smoothie bowls and overnight oats/porridge. The base for this recipe is the oats but the magic happens in the blender. Soaking them in boiling water and blending them with a few flavour-boosting ingredients (we shall talk Neapolitan later) and then layering them up. Serving them in jars seems fancier than in bowls, but they will taste just as delicious either way.

Now let’s talk Neapolitan! As summer is just round the corner (we hope) I have been thinking a lot about ice cream recently so I can only assume that is where the idea came from. You cannot deny that the rich chocolate, fruity berry and sweet vanilla are not the dreamiest combination and when turned into breakfast, it makes for a delicious start to the day.
Here’s how we make the regular oat base into Neapolitan magic:
These simple ingredients marry so well together and turn the oat base into something really special. As for the base, this is really easy to throw together.
That’s all there is to it. You are only some oats, boiling water and banana away from these delicious Neapolitan Breakfast Oat Jars and about 10 minutes worth of prep time (5 of which are while the oats soak).
Why do we soak the oats in boiling water first?
There are a few reasons but mainly because it helps the oats to swell up as they would when you make porridge oats (make sure they are gluten-free where needed), making them really creamy. It also adds to some of the liquid needed to blend the oat layers, meaning you need little liquid at the next few stages.
Once ready, layer up all the layers into 2 jars, or bowls, and enjoy by scooping out a large spoonful to make sure you taste some of each layer in every mouthful! It’s the breakfast form of your favourite ice cream dessert.

You can make up a large batch of this recipe to serve more than 2 people/portions as they will keep well for 2-3 days in the fridge. Keep the layers separately and serve them together just before eating or adding to your jars for the best flavours.
