Oat Berry Cheesecake Jars (Vegan Gluten-Free)

Thick, creamy and delicious deconstructed vegan, gluten-free cheesecakes served in jars! A no-bake biscuity oat base topped with a creamy yoghurt and condensed milk filling all topped with fresh berries and more biscuit crumble.

I love a good cheesecake; you know the ones that have the best buttery biscuit base and the smoothest filling and then something special on top? Those are my favourite kind: not too sweet but sweet enough for dessert. I’ll bet you have a few favourite cheesecake recipes in your archives that you whip our for impressive desserts and especially when the sun comes out. They are such a good no-bake and effortless dessert that just got even simpler thanks to these little Oat Berry Cheesecake Jars.

Serving a cheesecake in a jar is a pretty delicious idea, if you ask me. You get all the fun and taste of your favourite cheesecake without having to slice it up and serve it to your guests – they are ready to go pre-portioned and looking pretty. These Oat Berry Cheesecake Jars are:

  • Biscuity and crumbly
  • Smooth and silky
  • Naturally sweet and sticky
  • Fruity and fresh
  • Easy to make in 10 minutes
  • Naturally vegan and gluten-free
  • Very versatile

When it comes to flavours and toppings, anything goes but I wanted to keep it simple and fairly classic for this recipe. I was originally inspired by the Condensed Oat Milk from Natures Charm (available all over the world) as, although I love coconut, it’s so nice to have an oat-based condensed milk alternative that is made from natural ingredients. It’s sticky, think and luscious… you can use this wherever a recipe calls for condensed milk (like my Vegan Magic Cookie Bars).

Let’s go through a few of the ingredients needed for these Oat Berry Cheesecake Jars but skip ahead to the recipe card below for the full ingredient list and method.

The base is a simple no-bake biscuit mix:

  • Oats: make sure these are gluten-free where needed.
  • Ground almonds: or regular almonds and then blitz them to a fine meal. If you are nut-free, you can use ground seeds like sunflower or pumpkin.Β 
  • Coconut sugar: just a little for a sweet base and I prefer coconut sugar for the caramel-like flavours.
  • Cinnamon: for the sweetness.
  • Coconut oil: to bind the base together. You could also use vegan butter or margarine-style spread, too.
  • Condensed oat milk: this adds a lovely sweetness and stickiness to the mixture that pairs so well with the oats. Regular condensed milk will also work or add another 1 tbsp of maple syrup if you do not have any.

Blitz together the oats and almonds to make a fine meal and then stir in the other ingredients to make a crumbly mix. This is our Oat Berry Cheesecake Jar base and save a bit for the topping.

Now onto the creamy, dreamy, 3-ingredient filling:

  • Thick vegan yoghurt: for the best textured cheesecake filling use a thick yoghurt like dairy-free Greek-style yoghurt or my favourite is coconut yoghurt.
  • Condensed oat milk: this is where the flavour and texture of the condensed milk really shines. It makes the cheesecake filling sticky, creamy and so smooth. Use another condensed milk if you do not have the oat variety.
  • Lemon juice: just a splash for a slight tang (it works, trust me!).

Whisk the ingredients together and pile into the glass jars (or bowls) and top with your favourite toppings. I went for a quick raspberry chia seed jam which is just made from mashed raspberries and chia seeds and then some fresh strawberries. However, you can try so many other toppings:

  • Blueberries ad banana slices with a drizzle of caramel
  • Strawberries and chocolate
  • Peanut butter and banana
  • Crushed nuts and seeds
  • Granola and berries
  • Cookie dough pieces and chocolate chips

The base recipe for these Oat Berry Cheesecake Jars is so versatile and lends itself to so many flavours and toppings. I look forward to experimenting more, myself! These jars make a great dessert, afternoon snack or even fancy brunch recipe for friends and family and they are so good to make ahead, meaning they are ready to grab and go from the fridge.

Ingredients

    Biscuit base:
  • 100g oats
  • 50g ground almonds
  • 2-3 tbsp coconut sugar
  • 1/2 tsp cinnamon
  • A pinch salt
  • 2 tbsp coconut oil, melted
  • 1 tbsp condensed oat milk
  • Cheesecake filling:
  • 300g thick vegan yoghurt
  • 150g condensed oat milk
  • 1 tsp lemon juice
  • Fruity layer:
  • 100g raspberries
  • 1 tsp chia seeds
  • 3 strawberries, halved
  • Extra condensed oat milk

Directions

  1. Make the raspberry layer: mash the raspberries with a fork and then stir in the chia seeds. Leave to rest while you make the base and filling.
  2. Make the biscuit base: blend the oats to a flour and add to a mixing bowl with the ground almonds, sugar, cinnamon, and salt. Stir in the melted coconut oil and condensed oat milk and mix to a crumbly mix.
  3. Make the cheesecake filling: whisk together all the ingredients until smooth.
  4. Layer up the cheesecakes: fill 3 glasses or jars with most of the biscuit base then top with the cheesecake filling. Add on the raspberry mix and drizzle with extra condensed oat milk and biscuit mix. Add on the strawberries and serve, or keep in the fridge for 1-2 days.
