Kinder Bueno Baked Oats (Vegan Gluten-Free)

These Kinder Bueno Baked Oats are chocolatey, nutty and so delicious packed with wholesome ingredients and naturally vegan and gluten-free.

A kinder bueno is one of those chocolate bars that takes my straight back to my childhood. The crispy wafer base, the chocolate hazelnut filling and the smooth chocolate coating. They are simply divine but it had been a long time since I’d had one as they are sadly not vegan-friendly. Then, Love Raw invented their chocolate wafer bars and they are even better than I remember. They have a few flavours and they are perfect for stuffing inside and on top of these baked oats. Don’t worry if you don’t have these chocolate bars, you can use other chocolates and wafer biscuits, too.

These Kinder Bueno Baked Oats are very special to me, they are:

What ingredients do I need?

The base of these delicious oats is similar to my White Chocolate Berry Baked Oats as the texture is so amazing.

For the baked oats:

  • Ripe banana: or you can use applesauce if you prefer. Mash the banana till smooth to add sweetness and also it helps to bind the oats so they are cakey and moist.
  • Coconut yoghurt: this is my go-to dairy-free yoghurt as it’s thick and creamy and lends the richest texture to these baked oats. Other dairy-free yoghurt will work but it’s best to stick to a thick Greek-style one if you can.
  • Plant-based milk: any milk will be great here and my favourites are oat or almond. Soya, hemp or coconut (from the carton) are also delicious.
  • Hazelnut butter: this is for the kinder bueno flavour which tastes quite like Nutella, or chocolate spread. I use the delicious hazelnut butter from KoRo which is so silky smooth and tastes amazing but other nut or seed butters will work. Try cashew, almond or sunflower seed butter or tahini.
  • Chia seeds: to add lots of healthy goodness and to help bind the oats so that the slices come out neatly, like a slice of cake.
  • Oats: essential for baked oats. Make sure they are certified gluten-free, where needed.
  • Baking powder: for the rise.
  • Hazelnuts: for the real kinder bueno experience. If avoiding nuts, see below.
  • Dark chocolate: this adds some rich chocolate goodness to one half of the mix.
  • White chocolate: for the creamy chocolatey flavour for the other half of the baked oat mix.
  • Vegan protein powder: I use a vanilla one and a chocolate one for these Kinder Bueno Baked Oats as I like to divide the mix in two and swirl them together.   • Cocoa powder: to add to one mix to make it chocolatey.
  • Wafer chocolate bars: the Love Raw wafer chocolate bars are the best to use here as they are just like a kinder bueno, but if you cannot find them, you can leave these out or add some of your favourite vegan wafer biscuits.

To serve these oats, I use the same ingredients as in the base:

  • Coconut yoghurt: a few spoons on top is so delicious.
  • Melted chocolate: more is always more when it comes to chocolate. You can use vegan dark, milk or white chocolate here.
  • Hazelnut butter: this is optional but I love an extra drizzle.
  • Granola: for a little crunch on top, but this is optional. Make your own granola or use your favourite shop-bought one.

How do I make these Kinder Bueno Baked Oats?

They are really easy to make:

  • Mash the banana: and add to a mixing bowl.
  • Stir in the other wet ingredients: till smooth.
  • Add the chia seeds, oats, baking powder and hazelnuts: and stir till creamy.
  • Divide the mix into two parts: for the white chocolate chip and for the dark chocolate chip batters.
  • Flavour one half with the dark chocolate, chocolate protein and cocoa powder: and mix till smooth.
  • Flavour the second half with white chocolate and vanilla protein: and mix.
  • Fold in the chopped wafer bar chocolates: half in each batter.
  • Alternate scoops of chocolate and vanilla batter: into a greased dish.
  • Add more chocolate wafers: and bake for 30-35 minutes till risen and golden.
  • Enjoy warm or cold with extra toppings: as you like.

How long will these last?

Once cooled, these Kinder Bueno Baked Oats will keep for 2-3 days in a sealed container in the fridge. You can also freeze portions for up to 1 month, allowing to thaw before enjoying cold or warming back up in the oven or microwave.

Are these oats gluten-free and nut-free?

Yes, these are naturally gluten-free, just check that your oats are certified gluten-free and that your yoghurt, milk and chocolate wafers contain no gluten. To make these oats nut-free, swap the hazelnut butter for seed butter like tahini or sunflower seed butter and skip the hazelnuts. Make sure that the wafer biscuits, milk and yoghurt are nut-free. Make these nut-free will change the flavour but they are still delicious.

I cannot find vegan kinder bueno chocolates, what can I do?

The Love Raw wafers are exceptionally delicious, but if you do not have any, add in broken up wafer biscuits in any flavour (there are a few vegan ones available) or use your favourite cookies, too.

Ingredients

    For the Oats:
  • 1 ripe banana (about 100g)
  • 120g coconut yoghurt
  • 120ml plant-based milk
  • 2 tbsp hazelnut butter
  • 1 tbsp chia seeds
  • 100g oats
  • 1 tsp baking powder
  • 25g hazelnuts, chopped
  • 25g dark chocolate, chopped
  • 25g white chocolate, chopped
  • 15g vegan vanilla protein powder
  • 15g vegan chocolate protein powder
  • 5g cocoa powder
  • 2 wafer chocolates
  • To serve:
  • 2-4 tbsp coconut yoghurt
  • 2-4 tbsp melted dark chocolate
  • 2-4 tbsp hazelnut butter
  • 2 tbsp granola

Directions

  1. Preheat the oven to 160Fan/180*C and grease an 8-inch round dish (or similar).
  2. Mash the banana into a mixing bowl and stir in the yoghurt, milk, hazelnut butter and chia seeds. Now stir in the oats, baking powder and most of the hazelnuts until combined.
  3. Divide the oats into two: to the first bowl add the dark chocolate, chocolate protein powder and cocoa powder, ½ a crushed wafer chocolate bar and stir till mixed well. To the second oats, add the white chocolate, vanilla protein and ½ a crushed wafer chocolate bar and stir well.
  4. Scoop the oats into the baking dish, alternating between the chocolate and vanilla oats. Smooth over the top and top with the second wafer chocolate bar, broken up, and sprinkle over the remaining hazelnuts.
  5. Bake for 30-35 minutes, until firm to touch but still slightly soft in the middle. Allow to cool for 10 minutes.
  6. Serve warm or cold with the yoghurt, dark chocolate, extra hazelnut butter and some granola. Store leftovers, once cool, in the fridge for 2-3 days in a sealed container or in the freezer for up to 1 month.
