Peanut Butter Crunch Protein Smoothie (Vegan High Protein)

This vegan, protein Peanut Butter Crunch Protein Smoothie tastes like a dessert milkshake but is made with healthy ingredients and is ready in 5 minutes. Packed with hidden vegetables, it’s a great speedy breakfast for busy mornings.

I am so excited about this smoothie as it has been on repeat throughout this warmer weather. It is naturally sweet, chocolatey and rich made with wholesome ingredients and comes together in less than 5 minutes: just throw it all in the blender. The best way to take this to the next level is to decorate your glass with some coconut yoghurt and peanut butter and to add some crunchy protein bar underneath and on top for a really extra-ordinary breakfast.

This smoothie is amazing it is:

What ingredients do I need?

The ingredient list is simple and effective and I have shared my favourite products in the “shop the recipe” section below:

  • Banana: the riper the better as they are naturally sweeter which makes this smoothie taste like a dessert.
  • Frozen courgette: I love chopping up raw courgette and then freezing it in portions ready to go for smoothies. It adds thickness and volume without adding any sweetness or flavour and is great for sneaking in a portion of vegetables.
  • Vegan chocolate protein powder: this adds flavour, natural sweetness, protein and makes it more filling. I use any of the Macromike chocolate protein powders, of which there are so many to choose from.   • Seeds: I love adding in tons of seeds for omegas, healthy fats and more protein, too. I use a mix of hemp, chia and flaxseeds for this drink.
  • Ice cubes: for freshness.
  • Coconut kefir: this is so great for gut health as it is packed with live bacteria and my go-to is Cocos Organic natural kefir or you can use coconut yoghurt, too. If using a thick coconut yogurt, use half yoghurt and half plant-based milk.
  • Peanut butter: for flavour, peanut butter-goodness and to match these delicious protein bars featured, too. You can swap this for another nut or seed butter, too, which will still add healthy fats, fibre and protein.
  • Chocolate caramel protein bars: these are also from Macromike and are what inspired this drink. They are fully vegan, gluten-free and gut-healthy and are great to add at the bottom of your smoothie glass and on top. It makes me “eat” the smoothie rather than drink it, which is better for digestion overall.
  • Cacao nibs: for crunch on top.

Is this nut-free and gluten-free?

To make it nut-free, swap the peanut butter for tahini or sunflower seed butter. This smoothie is gluten-free and the protein bars listed are gluten-free, too, but pleasure check your own.

How do I make this?

This is so easy to make:

  • Add all the smoothie ingredients to a blender: and blend till creamy. I have a Vitamix but other blenders will work, too.
  • Use a spoon to spread some yoghurt and peanut butter inside the glass: and add some chopped up protein bar at the bottom.
  • Pour in the smoothie: almost to the top.
  • Add on some extra yoghurt, protein bar and cacao nibs: and sip away.

How long will this last?

This smoothie is best enjoyed straight away or at least the same day. Cover tightly and keep in the fridge if you’re going to enjoy it later.

Ingredients

For the Smoothie:

  • 1 banana, ripe
  • ½ courgette, frozen in cubes
  • 30g vegan chocolate protein powder
  • 1 tbsp each: chia seeds, ground flaxseed, hemp seeds
  • 4 ice cubes
  • 300ml coconut kefir
  • 2 tbsp peanut butter

To serve:

  • 1-2 chocolate caramel protein bars
  • 1 tbsp peanut butter
  • 2-4 tbsp thick coconut yoghurt
  • 2 tbsp cacao nibs

Instructions

  1. For the smoothie: add all of the ingredients into a blender and blend till thick and creamy.
  2. For the glasses: chop up the protein bar(s) into cubes. Use a spoon to spread some peanut butter on the inside of the glasses and spoon some yoghurt into the bottom of the glasses.
  3. To serve: add some cubes of protein bar to the base and pour in the smoothie. Top with more yoghurt, protein bar and some cacao nibs.
  4. Enjoy straight away.
