Pistachio Avocado Mousse (Vegan Gluten-Free)

This Pistachio Avocado Mousse is creamy, vibrant, naturally sweet and made with healthy ingredients (and hidden greens). It’s a perfect make-ahead dessert that is vegan, gluten-free and high in protein and fibre.

If you love all things pistachio and want a fun dessert to make this summer, this fresh, creamy and vibrant mousse is ideal. It’s made with secretly healthy ingredients and comes together in the blender in just 5 minutes. This pudding is great to serve to friends and family and is perfect for dinner parties, picnics or afternoon snacks. It’s also healthy enough to enjoy for breakfast, so it’s perfect all day long.

What ingredients do I need?

You can see the full ingredients with weights in the recipe card below and see my favourites in the “shop the recipe” section.

For the mousse:

  • Ripe avocado: the riper the better but make sure it’s bright green inside with no spots of brown as this will discolour the mousse and change the flavour.
  • Thick coconut yoghurt: the thicker and creamier the better, I like the Cocos Organic Vanilla or Natural yoghurt here.
  • Smooth pistachio butter: this is 100% pistachios and can be slightly salted, if you prefer. You can find this online or in health food shops. Failing that, use cashew butter or tahini but the pudding will no longer taste like pistachios. You can make your own pistachio butter by roasting, cooling and then blitzing up raw pistachios in a food processor to reach a creamy nut butter consistency.
  • Vanilla protein powder: this adds thickness, sweetness and protein and I use the Form Vanilla protein powder here which is packed with gut healthy goodness.
  • Maple syrup: for sweetness and texture. You can also use agave syrup or (vegan) honey.
  • Plant based milk: to thin the mix a little and use your favourite dairy-free milk like oat, almond, soya or coconut.
  • Baby spinach: this is for the colour while also adding some iron and vegetable goodness.
  • Matcha green tea powder: this is optional as it makes the pudding more vibrant green in colour without adding too much flavour.
  • Salt: for flavour.

And to serve:

  • Extra yoghurt: as above.
  • Pistachios: for crunch on top.
  • Extra pistachio butter: for drizzling.

Is this gluten-free and nut-free?

This is gluten-free but not nut-free. You can try this with tahini or sunflower seed butter, but it will no longer be a pistachio pudding.

How do I make this?

This pudding is ready to go in a few steps:

  • Blend together all of the mousse ingredients: until smooth.
  • Spoon or pipe into jars: and serve with more yoghurt, pistachios and nut butter.
  • Chill until needed: and enjoy.

How long will it last?

These will keep for 2-3 days in the fridge, covered tightly. They may start to darken in colour as the avocado oxidises.

Ingredients

For the Mousse:

  • 1 ripe avocado
  • 120g thick coconut yoghurt
  • 60g smooth pistachio butter
  • 40g Form Performance Vanilla Protein Powder
  • 2 tbsp maple syrup
  • 30ml plant-based milk
  • 10g baby spinach
  • ½ tsp matcha green tea powder, optional
  • Pinch salt

To Serve:

  • Extra coconut yoghurt
  • 2 tbsp pistachio butter
  • 2 tbsp crushed pistachios

Instructions

  1. Start by peeling and de-stoning the avocado and mashing until mostly smooth.
  2. Now add to a food processor or blender along with all of the other mousse ingredients and process until really smooth. Stop to scrape down the sides.
  3. Pipe or spoon the mousse into jars and serve with some extra yoghurt, pistachio butter and crushed pistachios.
  4. Enjoy straight away or keep in the fridge, covered well for 2-3 days.
