Salted Caramel Raspberry FroYo Stuffed Dates (Vegan)

Chocolatey, delicious and no-bake, these Salted Caramel Raspberry FroYo Stuffed Dates are the best dessert or snack ready from the freezer. They take a few minutes to prepare and are naturally plant-based, gluten-free and gut-healthy.

I love a FroYo recipe, it’s like eating ice cream, but without all the effort of making it from scratch and without all of the added ingredients in shop-bought ice cream. I have also combined this with my love for stuffed dates (which are amazing) and also with dark chocolate, meaning these bites are pretty amazing. They are rather large, so they make a really good snack or dessert after dinner. Pop them in the freezer and then you have these snacks ready to go for those hangry moments, when you crave chocolate and ice cream.

What ingredients do I need?

You can see the ingredients with weights in the recipe card and see my favourite and recommended products in the “shop the recipe” section.

For the dates:

  • Medjool dates: I used fresh medjool dates here which are larger and softer, but dried medjool dates are also great.
  • Thick coconut yoghurt: the thicker and creamier the better. I use Cocos Organic which is also great for gut health.
  • Vanilla protein powder: this thickens the mix and ads protein to the snacks. Make sure it’s a vegan one, where needed, like Form protein.
  • Fresh raspberries: to add some pops of fruitiness. You can also try these with strawberries (chopped up) or blueberries.
  • Salted caramel sauce: I use the Natures Charm Coconut Salted Caramel Sauce which is so delicious and is perfect for swirling on top. You can also make your own salted caramel sauce, too, use the filling here.
  • Dark chocolate: use your favourite dark or oat milk chocolate.
  • Coconut oil: melt this with the chocolate so that the chocolate shells set more quickly and they are less likely to break.
  • Freeze-dried raspberries: to add some pink on top.

Are these gluten-free and nut-free?

These are naturally gluten-free and nut-free, just check that your yoghurt, caramel and chocolate do not contain nuts.

How do I make them?

These are ready to go in a few steps:

  • Pit the date and flatten on a tray: and spread these out slightly.
  • Stir together the yoghurt, vanilla protein and raspberries: until smooth.
  • Scoop the yoghurt on top of the dates: to cover them all.
  • Swirl on the caramel sauce: and place in the freezer for 8 hours or overnight.
  • Melt the chocolate and coconut oil: either over a pan of simmering water or in the microwave.
  • Dip each date in the chocolate: and allow the excess to drip off.
  • Decorate with freeze-dried raspberries: and enjoy.

How long will they last?

These will keep for up to 1 month in the freezer in a sealed container.

Ingredients

  • 8 large or 14 smaller medjool dates
  • 250g thick coconut yoghurt
  • 40g vegan vanilla protein powder
  • 120g fresh raspberries
  • 8 tbsp Natures Charm Coconut Salted Caramel Sauce
  • 200g dark chocolate, chopped small
  • 1 tbsp coconut oil
  • 2 tbsp freeze-dried raspberry pieces

Instructions

  1. In a bowl, stir together the yoghurt and protein powder until smooth. Now add in the raspberries and allow them to mash up a bit as you stir the mix.
  2. Remove the stones from the dates and lay them flat on a parchment line plate or tray (freezer-safe), with space around each one.
  3. Use an ice cream scoop or spoon to scoop some of the yoghurt mix on top of the dates.
  4. Drizzle over the salted caramel sauce.
  5. Place flat in the freezer for 8 hours or overnight, until set solid.
  6. Add the chocolate and coconut oil to a heatproof bowl and place over a pan of simmering water to melt (or use a microwave).
  7. Once melted, one by one, dip each FroYo date into the chocolate, coating all sides. Allow the excess to drip off and place back on the tray.
  8. While the chocolate is still wet, sprinkle over the freeze-dried raspberries.
  9. Repeat to coat all the dates in chocolate and then enjoy straight away, as the chocolate sets quickly.
  10. Keep the dates in the freezer in a sealed container for up to 1 month. Allow to thaw for 20 minutes before eating.
