PB&J Overnight Oats (Vegan)

The creamiest and most delicious PB&J Overnight Oats ready in just 10 minutes. With homemade strawberry compote layered with chia seed packed oats and extra peanut butter, these are vegan and gluten-free.

I am back with another oats recipe, because you really can’t beat oats for breakfast prep. These are ideal to prepare the night before to make for a really delicious start to the day and you can make up a few, too, as they will keep for a few days in the fridge. This recipe takes the classic PB&J combination and turns it into a luscious yet healthy breakfast option with peanut butter and strawberry oats layered with fresh strawberry compote, more peanut butter and topped with crushed peanuts and more berries. It’s the breakfast dream!

What ingredients do I need?

You can see the ingredients in the recipe card with weights and see my favourite and recommended products in the “shop the recipe” section.

For the strawberry compote:

  • Fresh or frozen strawberries: in summer, use fresh berries but you can use frozen too, then will just take a little longer to turn into a compote.
  • Maple syrup: to make the mix really sticky and glossy.
  • Lemon juice: for tang.

And for the oats:

  • Strawberry overnight oat mix: I use the Linwoods energy strawberry overnight oat mix which already contains chia seeds. Use my code AMY15 for 15% off the website.
  • Smooth peanut butter: to add the peanut butter flavour.
  • Thick dairy-free yoghurt: I use Cocos Organic coconut yoghurt or NUSH protein original yoghurt and both are delicious. Look for ones with minimal ingredients and live bacteria inside for the gut.
  • Dairy-free milk: you can use any milk but I like soya as it’s a great source of protein (look for ones that are just soya beans and water) or use oat, almond or coconut milk.
  • Fresh strawberries: to add chunks of berry inside.

To serve these jars, I like to add extra yoghurt, strawberries and some crushed peanuts, too.

Are these gluten-free and nut-free?

These are easily gluten-free as long as you use GF oats. To make these nut-free, swap the peanut butter for tahini or sunflower seed butter and swap the peanuts on top for flaked coconut or seeds. Also check that your yoghurt and milk do not contain nuts.

How do I make these?

These are ready to go in a few steps:

  • Add the strawberries, syrup and lemon to a non-stick pan: and allow to bubble and turn glossy for about 10 minutes.
  • Stir together the ingredients for the oats: until combined.
  • Place in the fridge in a sealed container: overnight.
  • Layer up the jars with compote, oats, yoghurt and peanut butter: and top with your favourite toppings.

How long will they last?

Keep these oats in the fridge in a sealed container for 2-3 days.

Ingredients

For the Strawberry Compote:

  • 250g frozen or fresh strawberries, chopped into chunks
  • 1 tbsp maple syrup
  • ½ tbsp lemon juice

For the Overnight Oats:

  • 100g Linwoods Strawberry Overnight Oats
  • 2 tbsp smooth peanut butter
  • 120g thick dairy-free yoghurt
  • 240-360ml dairy-free milk
  • 160g fresh strawberries, chopped

To Serve:

  • Extra yoghurt, extra peanut butter, fresh strawberries, crushed peanuts

Instructions

  1. For the strawberry compote, add the berries, syrup and lemon juice to a non-stick pan and allow to warm through and bubble until soft. Stir often so they don’t stick. The strawberries are ready when they are soft, gooey and sticky. Pour into a heatproof container and chill until needed. They will keep in the fridge for up to 1 week in a sealed container.
  2. For the oats, add the oats into a bowl with the peanut butter, dairy-free yoghurt and start with 240ml milk and stir well until smooth. Fold in the strawberries.
  3. Leave for either 1-2 hours, until thicker. Or, cover tightly and keep in the fridge overnight. Just before, give it a good stir and add more milk as desired.
  4. Into two bowls or jars, add some peanut butter and yoghurt and spoon in some strawberry compote. Spoon in the strawberry oat mix and top with more yoghurt, strawberry compote, fresh berries and crushed peanuts.
  5. Eat straight away or keep in the fridge for 2-3 days.
