I recently shared some bounty and snickers inspired date cups, and safe to say, they were a huge hit. Along with the fact that I make some variation of these pretty much every week, I thought it was about time to share another recipe. Using the same combination of medjool dates with a yummy filling and then a dark chocolate coating, these cups are perfect for summer. What ingredients do I need?

You can see the ingredients with weights in the recipe card below and see my favourite and recommended products in the “shop the recipe” section.

For the cups:

  • Medjool dates: the big squishy ones are best here.
  • Strawberries: make the most of the late summer berries here. If it’s out of season, maybe swap these for bananas.
  • Crunchy almond butter: or you can use smooth, but I love the added crunch. Make sure it’s 100% nuts or with just some salt added.
  • Dark or dairy-free milk chocolate: I use the Raw Halo coconut cream based chocolate which is so creamy and naturally refined sugar free.
  • Coconut oil: to stir into the chocolate.
  • Flaked almonds: for added crunch on top.
  • Freeze-dried strawberries: for a pop of colour on top.

Are these gluten-free and nut-free?

These are naturally gluten-free and to make them nut-free, swap the almond butter for sunflower seed butter and the almonds on top for flaked coconut.

How do I make them?

These are ready to go in a few steps:

  • Open the dates: and squish them into a silicone mould.
  • Top with some almond butter and strawberries: and leave to one side.
  • Melt the chocolate and coconut oil: until glossy.
  • Pour over the cups: and decorate with flaked almonds and freeze-dried berries.
  • Set in the fridge: and then enjoy.

How long will they last?

These cups will keep for 3-5 days in the fridge in a sealed container or for 1 month in the freezer. Enjoy them as frozen snacks or allow to thaw slightly.

Chocolate Strawberry Smashed Date Cups (Vegan)

Ingredients

  • 8-12 medjool dates
  • 4 large strawberries, halved
  • 60g crunchy almond butter
  • 120g dark or oat milk chocolate, chopped or buttons
  • 1 tbsp coconut oil or more almond butter
  • 2 tbsp flaked almonds
  • 2 tbsp freeze-dried strawberries, optional

Instructions

  1. Have an 8-hole silicone muffin tray to hand.
  2. De-stone the dates and press 1 – 1 ½ into each hole, to cover the base.
  3. Spoon over the almond butter and press on half a strawberry. Place in the fridge.
  4. Add the chocolate and coconut oil or almond butter to a heatproof bowl and warm over a pan of simmering water or in the microwave until melted.
  5. Pour the chocolate over the cups and fill in any gaps.
  6. Decorate with flaked almonds and freeze-dried strawberries. Place back in the fridge for 30-60 minutes to set.
  7. Pop out of the moulds and enjoy straight away.
  8. Keep leftovers in the fridge for 3-5 days in a sealed container or in the freezer for 1 month. Enjoy straight from the freezer or allow to defrost for 20 minutes.
