Chai Apple Quick Soak Overnight Oats (Vegan)

Creamy delicious and cosy Chai Apple Quick Soak Overnight Oats ready in just 30 minutes with no need to soak overnight. They are packed with warming chai spices, lots of apple and have so much plant diversity in every bowl.

I love making quick-soak oats although it’s been a while since I shared a recipe for them. This chai apple combination is perfect for the season, with fresh fruits, cosy spices and so much flavour. I love the thickness of these oats and just how creamy they are without the need to leave for 6-8 hours. They are also packed with plant diversity with oats, seeds, buckwheat, fruits and yoghurt while being great for the gut and full of fibre, they really are the best way to start the day.

What ingredients do I need?

You can see the ingredients with weights in the recipe card below and see my favourite and recommended products in the “shop the recipe” section.

For the chai blend:

  • Cinnamon
  • Cardamom
  • Ginger
  • Nutmeg

And for the oats:

  • Rolled oats: I like to use bigger oats for more texture but smaller oats wil create a smoother porridge mix.
  • Ground flaxseed: for added fibre.
  • Chia seeds: to help thicken the mix and add omegas.
  • Buckwheat groats: to add texture. Add these raw as the hot water helps to break down the hard outside.
  • Apple: grate this into the mix to add texture and bite into each mouthful.
  • Boiling water: the magic ingredient to “quick cook” the oats and make them really creamy.
  • Vegan protein powder: use vanilla or a spiced protein powder here like chai or salted caramel. I like the Vanilla Form Protein.
  • Thick dairy free yoghurt: I use either Cocos Organic coconut yoghurt or NUSH protein yoghurt which are both vegan and made with wholefood ingredients.
  • Plant based milk: any dairy-free milk is great. I like soya as it’s naturally high in protein and look out for milk options with minimal ingredients.

Finally, to serve these, I make up a quick stewed apple with apple, maple syrup, lemon juice and cinnamon and then top with more yoghurt, fruits and any nuts/seeds or granola, that you like.

Are these gluten-free and nut-free?

These are easily gluten-free as long as your oats are GF. To keep it nut-free, check your milk and yoghurt and do not add nuts on top.

How do I make them?

These are ready in a few steps:

  • Add the oats, seeds, buckwheat and apple to a bowl: pour over the boiling water.
  • Leave to rest for 30 minutes: to thicken up.
  • Heat a pan and cook the apple, cinnamon, maple syrup and lemon: until sticky and softened.
  • Into the oat mix, add the chai spices, protein, milk and yoghurt: and stir until creamy.
  • Spoon into bowls and top with the apples: and other toppings.

How long will they last?

These will keep for 2-3 days in the fridge in a sealed container.

Ingredients

For the Spices:

  • 1 tsp cinnamon
  • ¼ tsp ground cardamom
  • ¼ tsp ground ginger
  • ¼ tsp ground nutmeg

For the Oats:

  • 80g rolled oats
  • 2 tbsp ground flaxseed
  • 2 tbsp chia seeds
  • 2 tbsp buckwheat groats
  • 1 apple, cored and grated
  • 280ml boiling water
  • 40g vegan protein powder
  • 120g thick dairy-free yoghurt
  • 120ml plant-based milk

For the Topping:

  • 1 apple, cored and in chunks
  • 1 tbsp maple syrup or (vegan) honey, plus extra
  • 1 tsp lemon juice
  • ¼ tsp cinnamon
  • 4 tbsp thick dairy-free yoghurt
  • Handful fruits e.g. blackberries, pomegranate
  • 4 tbsp chopped nuts/seeds or granola

Instructions

  1. Start by making the oat base. Add the oats, flaxseed, chia seeds, buckwheat and grated apple to a heatproof bowl and add the hot water. Stir well and leave to one side for 30 minutes.
  2. Meanwhile, make the topping. Add the chopped apple, syrup, lemon juice and cinnamon to a small saucepan and stir well. Once hot, simmer for 5 minutes with a lid on, until the apples have softened and are sticky.
  3. When the oats have soaked, add all of the spices with the protein, yoghurt and milk and stir well until creamy.
  4. Pour the oats into two bowls, spoon over the yoghurt and then the sticky apples. Add on some extra fruit, nuts/seeds and a drizzle of syrup or honey.
  5. Enjoy straight away or keep in the fridge for 2-3 days in a sealed container.
