Here I share my favourite vegan recipes that are not only delicious, but they are vibrant, wholesome and designed to nourish you from the inside out with vegan and vegan curious followers.
This Pumpkin Spice Matcha with Lion’s Mane is creamy, vibrant and packed with warming cosy spices. It is fully vegan, dairy-free and refined sugar-free and is so good for the season.
I love making hot warming drinks this time of year, and I always try to make them better for me. For the last few months, I have been loving the Mush range of functional mushroom liquid extracts, which are 100% organic, super effective and easy for the body to absorb. They have four at the moment: lion’s mane, cordyceps, reishi and chaga and Lion’s Mane is the one I reach for more often than not. Great for boosting brain and cognitive health, supporting the immune system and providing a natural mental clarity and a mood boost, it’s tasteless and alcohol-free, while being so easy to mix into your favourite drinks. If you have been on the fence about adding adaptogenic mushrooms to your drinks, this is your chance them, and I can assure you, you will love it. Try the range here with my code Amy10 to save 10% too.

What ingredients do I need?
You can see the ingredients with weights in the recipe card and see my favourite and recommended products in the “shop the recipe” section.
For the pumpkin mix:
Pumpkin pie spices: a blend of cinnamon, ginger, nutmeg, clove and allspice.
Pumpkin puree: this is 100% pumpkin and not pumpkin pie filling.
Maple syrup: to add sweetness. Honey or agave syrup will also work.
Vanilla extract: for flavour.
Dairy free milk: use soya, coconut, almond or oat milk here.
Ceremonial grade matcha: I always use Matchaeologist, it’s the best quality, flavour, colour and appearance I have ever tried. My favourite is the Meiko blend, but they are all good. Have a look here (my code is nourishinglove15).
Water: to blend the matcha into a paste. I use room temperature water when making cold and hot drinks for my matcha slurry.
