Onto the drink now. It’s rich and cosy, packed with real pumpkin puree, pumpkin pie spices and it is sweetened with a little maple syrup. It is fully dairy-free and so delicious with ceremonial grade matcha and topped with a little frothed milk for a really amazing drink that is coffee shop worthy!

What ingredients do I need?

You can see the ingredients with weights in the recipe card and see my favourite and recommended products in the “shop the recipe” section.

For the pumpkin mix:

  • Pumpkin pie spices: a blend of cinnamon, ginger, nutmeg, clove and allspice.
  • Pumpkin puree: this is 100% pumpkin and not pumpkin pie filling.
  • Maple syrup: to add sweetness. Honey or agave syrup will also work.
  • Vanilla extract: for flavour.
  • Dairy free milk: use soya, coconut, almond or oat milk here.
  • Ceremonial grade matcha: I always use Matchaeologist, it’s the best quality, flavour, colour and appearance I have ever tried. My favourite is the Meiko blend, but they are all good. Have a look here (my code is nourishinglove15).
  • Water: to blend the matcha into a paste. I use room temperature water when making cold and hot drinks for my matcha slurry.

  • Frothed milk: or dairy-free cream, to top.

Is this gluten-free and nut-free?

This is naturally gluten-free and nut-free, as long as your dairy-free milk does not contain nuts/gluten.

How do I make this?

This is ready to go in a few steps:

  • Combine the spices for the pumpkin spice blend: and store for months in a sealed jar.
  • Stir together the latte mix: until a smooth paste.
  • Sift the matcha and whisk in the water: to a slurry.
  • Add in the drops of Lion’s Mane: and stir again.
  • Warm milk if making hot drinks: or use milk from the fridge.
  • Spoon some pumpkin mix into the glasses: use heatproof ones where needed.
  • Top with milk and then the matcha: finish off with some frothed milk.
  • Dust with spices/cinnamon: and stir to enjoy.

How long will it last?

This is best enjoyed straight away once poured. The pumpkin puree mix will keep for 1 week in a sealed container in the fridge.

This Pumpkin Spice Matcha with Lion's Mane is creamy, vibrant and packed with warming cosy spices. It is fully vegan, dairy-free and refined sugar-free and is so good for the season.

Ingredients

For the Pumpkin Spice Mix:

  • 2 tbsp ground cinnamon
  • 1 tbsp ground ginger
  • ½ tsp ground nutmeg
  • ½ tsp ground clove
  • ¼ tsp allspice

For the Pumpkin Spice Latte:

  • 100g pumpkin puree
  • 2 tbsp maple syrup
  • 2 tbsp pumpkin spices
  • 1 tsp vanilla extract
  • 750ml dairy-free milk (approx.)
  • 3 heaped tsp ceremonial grade matcha powder
  • 300ml room temperature water
  • 6ml (6 pipettes) MUSH Lion’s Mane liquid extract
  • Frothed milk, as extra

Instructions

  1. Make the pumpkin spice mix in a small saleable jar and stir to combine. Keep sealed at room temperature for 2-3 months.
  2. For the latte blend, add the pumpkin puree, maple syrup, pumpkin spices and vanilla to a bowl and stir well. Divide this between three heatproof glasses or mugs (or keep in the fridge in a sealed container for 1 week).
  3. Add the matcha to a bowl with ½ of the water and whisk well until smooth and frothy. Gradually whisk in the remaining water. Add in the MUSH Lion’s Mane Liquid extract.
  4. If desired, warm the milk until lukewarm, or serve cold, with or without ice.
  5. Pour the milk into the three glasses or mugs.
  6. Top with the Lion’s Mane Matcha mix and stir well.
  7. If you like, top with some frothed milk and more pumpkin spices sprinkled on top.
  8. Enjoy straight away.
