If you haven’t yet tried the viral pine cones, then you are in for a treat. These Christmassy desserts have a chocolate fudgy centre with pine cone flakes, all coated in chocolate. This particular version has added nutritional benefits, with healthy fats, antioxidants, added fibre and protein and they taste so good. They make the prefect no-bake dessert this festive season and everyone will enjoy them.

What ingredients do I need?

You can see the ingredient list with weights in the recipe card and see my favourite and recommended products in the “shop the recipe” section.

For the pine cones:

  • Smooth runny peanut butter: I love the deep roast ones, with 100% peanuts, or use almond or cashew butter. Try sunflower seed butter or tahini to keep them nut-free.
  • Maple syrup: or use agave syrup.
  • Melted coconut oil: to hold shape.
  • Oat flour: make your own by blending oats to a fine flour-like texture,
  • Cacao powder: for a rich and chocolatey brownie.
  • Chocolate protein powder: I use the Form chocolate peanut protein which tastes so good and is delicious here. Take a look at the range here and use other flavours, too. Or, use more oat flour if you prefer to not use protein powder.
  • Salt: for flavour.
  • Cornflake cereal: this creates the pine cone effect. Look for ones without added sugars.
  • Dark chocolate: use your preferred chocolate here like oat milk based or dark chocolate. I love the Raw Halo buttons or the HU Kitchen chocolate, too.

Are these gluten-free and nut-free?

These are naturally gluten-free, as long as your oats are GF (and check your cornflakes). To make them nut-free, use tahini or sunflower seed butter instead of peanut butter and use a nut-free protein powder.

How do I make them?

These are ready to go in a few steps:

  • Combine the wet ingredients and add in the dry: to make a brownie batter texture.
  • Divide into 10 and shape into triangles: aka pine cones.
  • Add in the cornflake cereal to create the pine cone: using as many or as few as you like.
  • Pop in the fridge: to firm up.
  • Melt the chocolate and coconut oil: until glossy. I use a small bowl over a pan of summering water.
  • Drizzle the pine cones in the chocolate: allowing the excess to drip off.
  • Allow them to set: and enjoy

How long will they last?

Keep leftovers in the fridge in a sealed container for 1 week.

Ingredients

  • 160g smooth runny peanut butter
  • 100ml maple syrup
  • 3 tbsp melted coconut oil, divided
  • 100g oat flour
  • 60g raw cacao powder
  • 30g Form Chocolate Peanut Protein powder
  • Pinch of salt
  • Cornflake cereal
  • 220g dark chocolate, chopped small
  • Icing sugar, to dust

Instructions

  1. For the brownie mix, add the peanut butter, maple syrup and 2 tbsp coconut oil to a mixing bowl and whisk until smooth. Add in the oat flour then sift in the protein powder and the cacao powder. Add the salt and stir to a sticky brownie batter.
  2. Divide into 10 balls and place on a parchment lined tray. Chill for 30 minutes, so the brownie batter is firmer.
  3. Now shape each brownie ball into a pine cone shape (triangular) and press in cornflakes all around the cone. Chill in the fridge for 30 minutes.
  4. Add the chocolate and 1 tbsp coconut oil to a heatproof bowl and melt in the microwave or over a pan of simmering water until glossy.
  5. One at a time, coat the pine cones in the chocolate, allowing the excess to drip off.
  6. Place the pine cones back on the parchment and allow to set (either at room temperature or in the fridge for 5 minutes).
  7. Dust with icing sugar and enjoy straight away.
  8. Keep leftover pine cones in the fridge in a sealed container for up to 1 week.
