These creamy and vibrant Strawberry Matcha Quick Soak Overnight Oats are naturally dairy-free, high in fibre and protein and the perfect breakfast to start the day.
I love oats for breakfast but if you don’t have time or have forgotten to soak them overnight, fear not, you can use this quick soak method instead. With this recipe, breakfast is ready with just a 30-minute soak (e.g. going to have a shower or get ready for the day) and they taste so good. If you love matcha, these will be the best for you (and even if you don’t like matcha, I highly encourage you to try it) and they pair so beautifully with the strawberries on top. These oats only require about 10 minutes of work (stirring and whisking) and that’s it! You can also prepare a bigger batch of these to last the week, if you prefer to meal prep, too.

Pour the matcha in the aits: and leave for 30 minutes.
Stir the yoghurt, frozen strawberries and freeze-dried berries together: until creamy.
Spoon the strawberry mix over the oats: and enjoy.
How long will they last?
Once topped with the strawberry mix, these are best eaten within a few hours, but the matcha oat mix will keep for 2-3 days in the fridge in a sealed container.

Ingredients
For the Oats:
4 tbsp oats (approx. 35g)
4 tbsp chia seeds (approx. 50g)
4 tbsp ground flaxseed (approx. 50g)
40g vegan protein powder (e.g. vanilla flavour) - 2 tbsp per serve
120g dairy-free thick yoghurt, plus extra to serve
300ml dairy-free milk
2 heaped tsp ceremonial grade matcha
120ml warm water
For the Strawberry Top:
200g strawberry coconut yoghurt
120g frozen strawberries (previously chopped)
2 tbsp freeze dried strawberries, if you like
Chopped pistachios, optional
Instructions
For the oats, add the oats, chia seeds, ground flaxseed and protein to a bowl and stir well. Add in the yoghurt and milk and stir again.
Sift the matcha into a bowl or large mug and add about half of the water. Use a matcha whisk to whisk into a smooth paste and then gradually whisk in the rest of the water. It should be vibrant and frothy.
Pour the matcha into the oats and stir well until creamy. Cover and leave to one side for 30 minutes. Or, you can keep these in a sealed container now for 2-3 days and continue to the next step when you are ready to serve.
For the top, add the strawberry yoghurt to a bowl and stir in the frozen strawberries and freeze-dried strawberries to combine.
When ready to serve, divide the oats between two bowls and spoon over the strawberry yoghurt. Dust with extra matcha and add the chopped pistachios.
Enjoy straight away.
