Mince Pie Giant Cinnamon Roll (Vegan)

This is one delicious dessert to share over the festive period, it’s a Mince Pie Giant Cinnamon Roll, filled with cinnamon sugar, mincemeat and mince pies. Plus it’s vegan, so fluffy and soft and topped with a vanilla bean glaze.

If you love all things mince pies and also love a cinnamon bun, then you are going to love this bake. It is so festive and delicious, made with really fruity mincemeat, cinnamon sugar and some crushed up mince pies to take this to the next level. As it’s one big one, it’s deal to tear and share or slice into pieces (like you would a cake) to enjoy with friends. This giant bun has a sticky icing sugar glaze on top which makes it so delicious and sticky, too, everyone will love a piece of this!

What ingredients do I need?

You can see the ingredients with weights in the recipe card below and see my favourite and recommended products in the “shop the recipe” section.

For the dough:

  • Plant-based milk: use your favourite dairy-free milk like soya, oat, almond or coconut (from the carton).
  • Vegan butter: this is block butter and makes the dough rich.
  • Light brown sugar: to add sweetness to the dough.
  • Fast action yeast: make sure it’s in date so that it rises well.
  • Plain white flour: this will not work with GF flour.
  • Dairy free yoghurt: instead of egg, this makes the dough so soft. I use a high-fat creamy yoghurt like Cocos Organic or NUSH.
  • Vanilla extract: to add sweetness.
  • Salt: for flavour.

And for the filling:

  • Cinnamon: for all the flavour.
  • Light brown sugar: as above
  • Olive oil: instead of butter to brush the dough.
  • Fruity mincemeat: I make my own using this recipe or buy it from the shops (make sure it’s vegan).
  • Mince pies: make sure these are vegan, if buying them from the shops, or make your own – I love this recipe.

As for the glaze:

  • Icing sugar: to make it sticky and sweet.
  • Vanilla bean powder: to add specks of vanilla throughout, or add some vanilla extract, too.

Is this gluten-free and nut-free?

This is not gluten-free but is nut-free.

How do I make this?

This is ready to go in a few steps:

  • Warm together the milk, butter and some sugar: and sprinkle over the yeast.
  • Allow the yeast to bloom: for 5 minutes.
  • Stir the flour, milky mix, yoghurt, vanilla and salt: and knead together for 10 minutes.
  • Place in a greased bowl and cover: and allow to rise for 1 hour or so.
  • Punch the dough down and roll out: on a lightly floured surface.
  • Spread with olive oil, the cinnamon sugar, mincemeat and crushed up mince pies: and spread out evenly.
  • Slice into strips along the long edge: and roll up the first strip into one roll.
  • Roll the second strip of dough around the first: to make one larger roll.
  • Repeat this a second time: to make a bigger roll.
  • Place the roll in a parchment lined tin: and then place strips around it, to use them all up.
  • Bake in the oven for 30 minutes: or until well-risen, bubbling and golden brown.
  • Allow to cool in the tin for a bit: and then lift out.
  • Mix together the icing sugar glaze: and spread over the bun.
  • Slice and enjoy: or eat later that day.

How long will it last?

This is best eaten on the same day, but you can cover it keep it for 1 day.
