Chocolate Chia Seed Breakfast Pudding (Vegan)

This super thick and delicious Chocolate Chia Seed Breakfast Pudding is packed with plant-based protein and fibre and you only need 4 main ingredients. It doubles up as dessert too and is great served with some yoghurt and berries.

I love a breakfast that tastes like dessert and this pudding really does feel and taste so indulgent, yet it’s made with a handful of wholesome ingredients. The base is chia seeds, chocolate milk, cacao powder and maple syrup with some added salt for flavour. Then allow it to thicken for a couple of hours and serve with your favourite toppings – I went for thick coconut yoghurt and some berries, but anything goes. You can prep this for a few days, so you have a delicious breakfast/snack/dessert for the week, and it keeps getting better.

What ingredients do I need?

For the pudding:

  • Biomel chocolate milk: this is from Biomel and is naturally dairy-free, high in protein and fibre. You can use other dairy-free chocolate milks, and note that this is already quite creamy and thick so leads to a much thicker pudding!
  • Chia seeds: this is the magic ingredient to make the pudding thick, creamy and high in fibre and protein.
  • Cacao powder: to make it really chocolatey.
  • Maple syrup: for sweetness otherwise, the cacao is too strong! You can use honey or agave syrup, too.
  • Salt: for flavour.

To serve, I like to spoon on some dairy-free yoghurt and top with berries and crushed nuts or seeds.

Is this gluten-free and nut-free?

This is naturally gluten-free and nut-free (leave out the pistachios on top).

How do I make this?

This is ready in a few steps:

  • Add the ingredients to a small blender: and blend until creamy.
  • Allow to chill in the fridge for a couple of hours: to thicken up.
  • Serve in jars with your favourite toppings: and enjoy.

How long will it last?

This pudding will keep for 2-3 days in the fridge, in a sealed container.

Ingredients

For the Pudding:

  • 1 x 300ml Biomel Chocolate Protein Shake (chocolate milk)
  • 50g chia seeds
  • 3 tbsp cacao powder
  • 2 tbsp maple syrup
  • A pinch of salt

To Serve:

  • Thick dairy-free yoghurt
  • Fresh berries
  • Crushed pistachios or seeds

Instructions

  1. For the pudding, add all of the ingredients to a high-speed blender and process until thick and creamy.
  2. Pour into a bowl or sealable container and cover for 2-4 hours (or overnight) to thicken in the fridge.
  3. When ready to serve, divide between 2-3 jars and top with some yoghurt, berries and nuts or seeds. Enjoy straight away or keep in the fridge for 2-3 days.
