Chocolate Crispy Chickpea Date Bites (Vegan)

Deliciously crunchy, these no-bake Chocolate Crispy Chickpea Date Bites are made with vegan, gluten-free and high fibre ingredients. They are such a great snack or dessert and taste amazing.

I love anything with chocolates and dates, but I also love crispy chickpeas. I have seen a few chocolatey chickpea snack recipes and thought these would be so perfect made into little cups with some added goodness like dates, seeds and puffed quinoa for even more added texture. The key component to this recipe is making sure you crisp up the chickpeas so that when you bite into these, they are so crispy and crunchy and so satisfying.

What ingredients do I need?

For the bites:

  • Chickpeas: I use the regular chickpeas from Bold Bean Co and make sure you rinse and pat them dry so they turn really crispy.
  • Olive oil: drizzle this before baking to make sure the chickpeas are crispy.
  • Cinnamon: for flavouring the chickpeas.
  • Salt: for flavour.
  • Dark chocolate: I love Raw Halo or Hu Kitchen chocolate as they are made with wholefood ingredients.
  • Smooth runny peanut butter: or you can use almond or cashew butter.
  • Medjool dates: or other dates, chopped small.
  • Mixed seeds: I use a mix of pumpkin, sunflower and whole flaxseed.
  • Puffed quinoa: these little puffs add lots of crunch and protein, too. You can also use some puffed rice cereal or protein crispies.
  • Freeze-dried strawberries: I love to add some of these on top to add a pop of colour and for some lovely berry flavour.

Are these gluten-free and nut-free?

These are naturally gluten-free and to make them nut-free, swap the peanut butter for tahini or sunflower seed butter.

How do I make them?

These are ready to go in a few steps:

  • Pat the chickpeas dry: so that they turn really crispy.
  • Drizzle with olive oil, salt and cinnamon: and air fry or bake until crispy.
  • Melt the dark chocolate and peanut butter: until glossy.
  • Stir together all of the ingredients: including the chickpeas.
  • Spoon into silicone moulds: and smooth over the tops.
  • Sprinkle with some freeze-dried strawberries: and set in the fridge.
  • Remove from the moulds: and enjoy.

How long will they last?

These will keep for up to 1 week in the fridge in a sealed container or 1 month in the freezer.

Chocolate Crispy Chickpea Date Bites (Vegan)

Ingredients

  • 240g chickpeas, drained and rinsed
  • ½ - 1 tbsp olive oil
  • ½ tsp cinnamon
  • A pinch of salt
  • 140g dark chocolate, chopped small
  • 50g smooth runny peanut butter
  • 80g medjool dates (pitted weight), chopped small
  • 30g mixed seeds
  • 10g puffed quinoa
  • 1 tbsp freeze-dried strawberries, optional

Instructions

  1. Pat the chickpeas dry and add to a tray. Toss with the olive oil, cinnamon and salt until evenly coated but not too wet. Air fry at 180C for 15-20 minutes until crispy and golden (they will start to pop)* tossing them around halfway through.
  2. Meanwhile, add the chocolate and peanut butter to a small heatproof bowl and set over a pan of simmering water to melt.
  3. Add the crispy chickpeas to a bowl with the dates, seeds and quinoa and pour in the chocolate. Stir well to evenly coat everything.
  4. Now spoon into 8 silicone cupcake moulds (or use paper cases) and pat down.
  5. Sprinkle over the freeze-dried strawberries, if using, and then place in the fridge for 1-2 hours to set.
  6. Remove from the moulds and enjoy straight away. Keep in the fridge in a sealed container for 1 week or the freezer for 1 month. Allow to thaw for 20 minutes.

*or bake in the oven at 180Fan/200C for 20-30 minutes until crispy.
