Here I share my favourite vegan recipes that are not only delicious, but they are vibrant, wholesome and designed to nourish you from the inside out with vegan and vegan curious followers.
These deliciously moreish Chocolate Date Caramel Apple FroYo Bites are made with a handful of gut-friendly, high-fibre ingredients and they taste so indulgent. They are naturally vegan and gluten-free, too.
I love having chocolatey snacks in the freezer for an after dinner sweet treat or something in the afternoon to keep me going and these are my new FroYo bites – I have made a few over the years. I love yoghurt, so it’s only natural to make the most of a fresh tub and turn it into these delicious bites. They are naturally plant-based, gluten-free and require no cooking or baking: simply stir, scoop and freeze. Then the best part is dunking them in your favourite dark chocolate.

What ingredients do I need?
You can see the ingredients with weights in the recipe card below and see my favourite and recommended products in the “shop the recipe” section.
For the bites:
Medjool dates: chop these into small chunks so that each bite has lots of dates inside.
Apple: chop this into small cubes. Leave the skin on but cut out the core.
Thick coconut yoghurt: I use Cocos Organic natural yoghurt which is packed with billions of live cultures for the gut and is thick and creamy. I also love the vanilla yoghurt.
Almond butter: choose one that is runny smooth and 100% nuts.
Maple syrup: for a little bit of sweetness and that “caramel” flavour.
Mixed seeds: for added crunch, fibre and plant diversity. I use a mix of pumpkin, sunflower, sesame and hemp. Chia seeds and whole flaxseed are also great.
Cinnamon: for flavour.
Dark chocolate: my go-to chocolate brands are Raw Halo and HU Kitchen as they are made with natural ingredients and taste so good.
Coconut oil: to allow the chocolate to set more quickly and so it’s thinner meaning it’s easier to dip and dunk the bites into.
Chopped nuts: for adding on top. Or sprinkle on some more seeds, some freeze-dried berries or leave them plain.
Flaky salt: this is optional but works so well on top of dark chocolate.

Are these gluten-free and nut-free?
These are naturally gluten-free and to make them nut-free, swap the almond butter for sunflower seed butter or tahini and swap the chopped nuts on top for seeds, freeze-dried berries or desiccated coconut.
How do I make them?
These are ready to go in a few steps:
Chop the dates and apple: into small chunks.
Stir together the yoghurt, almond butter and syrup: until smooth.
Add in the other ingredients: and combine.
Use an ice cream scoop or spoon: to scoop into rounds.
Freeze for 2 to 4 hours: or overnight.
Melt the dark chocolate and coconut oil: until glossy.
Dip dunk and drizzle the bites in chocolate: so they are evenly coated.
Sprinkle with chopped nuts and flaky salt: and allow to set.

How long will they last?
Enjoy these straight from the freezer (or thaw for 15 minutes) and keep for 1-2 months in a Ziplock bag.

Ingredients
For the FroYo:
8 medjool dates
1 apple
300g thick coconut yoghurt
60g smooth almond butter
1 tbsp maple syrup or honey
A sprinkling cinnamon
For the Chocolate:
240g dark chocolate, chopped small
1 ½ tbsp coconut oil
2-3 tbsp chopped nuts
Flaky salt
Instructions
Line a tray or plate (that will fit in your freezer) with parchment paper.
De-pit the dates and chop into small pieces. Core the apple and chop into small pieces.
Add the yoghurt, almond butter and syrup to a bowl and stir well.
Add in the dates, apples, seeds and cinnamon and stir until evenly combined.
Use an ice cream scoop or large spoons to divide into 9 rounds onto the trays.
Flatten slightly and then place in the freezer for 2-4 hours or until est firm (you can leave them overnight).
Add the chocolate and coconut oil to a heatproof bowl and warm over a pan of simmering water and warm until melted.
Remove the FroYo bites from the freezer and one by one, place in the chocolate and work quickly to evenly coat the bites (I use two forks). Allow the excess to drip off and place on the parchment. While the chocolate is wet, sprinkle with nuts and salt.
Repeat to coat all the bites. The chocolate will set very quickly so you can eat them straight away.
Keep leftovers in the freezer for 1-2 months in a sealed Ziploc bag. You can allow them tot haw for 10-15 minutes, if you prefer.
